1 pound ground beef
2 (15 ounce) cans chili with beans
1 (32 ounce) package extra crispy frozen potato rounds (such as Tater Tots®)
4 slices bacon
1 (8 ounce) package processed cheese food (such as Velveeta®)
4 green onions, chopped

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the chili and mix thoroughly. Spread the chili mixture into a 9x13-inch baking pan then top with a single layer of the frozen potato rounds.
  • Bake in the preheated oven until heated through and potato rounds are crisp, 18 to 22 minutes. 1/4 cup butter, cubed
1/2 cup sugar
3 tablespoons baking cocoa
1/2 teaspoon vanilla extract
1 large egg, room temperature
1/4 cup all-purpose flour
1/8 teaspoon baking powder
1/8 teaspoon salt
CHEESECAKE LAYER:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1-1/2 teaspoons vanilla extract
3/4 cup semisweet chocolate chips, melted and cooled
2 large eggs, room temperature, lightly beaten
GANACHE:
1-1/2 cups semisweet chocolate chips
1/2 cup heavy whipping cream
1 teaspoon vanilla extract

  • Preheat oven to 350°. Line a 13x9-in. pan with foil, letting ends extend up sides; grease foil. In a microwave, melt butter in a large microwave-safe bowl. Stir in sugar, cocoa and vanilla.
