1/4 cup reduced-sodium teriyaki sauce
2 tablespoons unsweetened pineapple juice
2 boneless skinless chicken breast halves (4 ounces each)
3 whole wheat bagels, split and toasted
6 tablespoons pizza sauce
3/4 cup pineapple tidbits
1/4 cup finely chopped fresh mushrooms
1/4 cup finely chopped green pepper
1/4 cup finely chopped sweet red pepper
2 green onions, thinly sliced
1-1/2 cups shredded part-skim mozzarella cheese

  • In a large resealable plastic bag, combine teriyaki sauce and pineapple juice. Add chicken. 2 poppy seed bagels, sliced in half and innards hollowed out (reserve for another use)
2 tablespoons olive oil
8 ounces hot Italian sausage, crumbled and cooked
8 ounces deli mozzarella, thinly sliced
1 cup whole San Marzano tomatoes, hand crushed and dried on paper towel
8 fresh basil leaves, cut into chiffonade

Steps:

  • Position an oven rack in the lower middle position and set the oven to high broil. Line a sheet pan with foil.
  • Brush both sides of the bagel halves with the olive oil and place on the lined sheet pan. "Stuff" the sausage crumbles inside the scooped bagel halves, then top each half with about 3 slices of mozzarella. All-purpose flour, for dusting
1 pound store-bought pizza dough, at room temperature
8 ounces shredded sharp Cheddar
2 tablespoons unsalted butter, melted
1 tablespoon everything bagel seasoning
5 large eggs
2 tablespoons chopped fresh chives
Hot sauce, for serving

Steps:

  • Place a pizza stone or inverted rimmed baking sheet on the lowest rack of the oven and preheat to 400 degrees F.
  • Set a cooling rack inside another rimmed baking sheet, spread out the bacon and bake on the stone or baking sheet until cooked and crispy, 20 to 22 minutes. Crumble and set aside on a paper towel-lined plate.
