Yet another recipe from Canadian Magazine, Chatelaine. What's great about their recipes is they are triple tested and always tasty. Great to dress up grilled chicken, steak, fish or burgers. Recipe is easily doubled.

TROPICAL MANGO AND PINEAPPLE PARADISE SALSA

Tropical Mango and Pineapple Paradise Salsa image

This is a delightfully fresh salsa with a slight kick, that is super tasty with jerk chicken, grilled seafood, quesadillas or warm corn chips (especially blue ones - the colors are fabulous together!). Plus, it is super easy to make! This salsa is fairly mild, although the onion does pack some punch. I like it this way as a contrast to more spicy Mexican or Caribbean dishes, and because it really allows the yummy fruit flavors to shine!! However, you can add some fresh jalapeno or other pepper if you want it more spicy.

Tips

  • To enhance the tropical flavor, consider adding a tablespoon of chopped cilantro or a dash of lime juice.
  • For a spicier salsa, increase the amount of jalapeño pepper. Use gloves when handling the peppers and remove the seeds if you prefer a milder salsa.
  • Cut the mango and pineapple into small pieces for a salsa that is easier to scoop and serve. For a more rustic salsa, cut the fruit into larger chunks.
  • If you don't have fresh mango and pineapple, you can substitute frozen or canned fruit. Just be sure to drain the canned fruit well before using.
  • Serve the salsa immediately or chill it for later use. The flavors will meld and develop over time, so feel free to make it ahead of time.

Conclusion

This tropical mango and pineapple paradise salsa is a burst of flavor that is perfect for any occasion. With its sweet, tangy, and slightly spicy taste, it is sure to be a hit at your next party or gathering. And because it is so easy to make, you can whip it up in no time.
