La tizana is a classic Venezuelan drink, enjoyed at birthday parties, at the beach, in the summer, with an afternoon snack - really for any occasion.

1 medium pineapple
1 mango (or papaya)
15 strawberries
1 1/2 cups green or red grapes
2 ripe bananas
3 oranges
2 to 3 cups orange juice
1 can frozen limeade mix
1/4 grenadine

Steps:

  • Gather the ingredients.
  • Peel and chop the pineapple, mango and/or papaya, and strawberries into 1/2 inch dice and add to a large pitcher, including any juice.
  • Slice the grapes in half and add to the other fruit.
  • Peel, seed, and chop 2 of the oranges and add.
  • Cut remaining orange into thin slices and set aside for serving on the rim of each glass.
  • Peel and slice the banana into rounds, then slice each round in half. Add bananas to the rest of the fruit. You should have about 6 cups of chopped fruit. (Use any kind of fruit that you have on hand - other good choices include peaches, kiwis, apples, etc).
  • Cover the fruit with about 2 to 3 cups of orange juice and then add the can of frozen limeade mix .
  • Fill the empty can with water twice and add to the fruit mixture.
  • Stir in the grenadine syrup, adding more than 1/4 cup if desired to obtain the desired color.
  • Chill mixture for several hours before serving, allowing the flavors to blend.
  • To serve, fill each glass 2/3 full, including plenty of chopped fruit, then fill to top with club soda, water, more juice (passion fruit juice would be tasty), or alcohol. Serve glass with a slice of orange on the rim and spoon on the side for the fruit.

4 cups passion fruit juice
1 cup club soda

1 inch ginger
2 tablespoons rice vinegar
1 tablespoon honey
1 tablespoon tamarind paste
1 lb tilapia fish fillet
1 cup couscous
13 ounces coconut milk
1 cup israeli couscous
1 (15 ounce) can coconut milk
1/4 cup water
1 dash rosemary
1 dash thyme

Steps:

  • Combine ginger, honey, tamarind paste, and vinegar in a small pot and bring to a simmer. Add salt and pepper for seasoning. Cook for about 3 minutes, or until contents of pot have thickened - stirring occasionally.
  • Preheat oven to 475. Line small baking tray with aluminium foil. Pat dry tilapia fillets. Drizzle with olive oil and season with salt and pepper. Place seasoned fillets on aluminum foil. Using a spoon, glaze the fish with the tamarind sauce. Roast for 8 to 10 minutes - then place under the broiler on HI for 3 minutes. After cooked garnish with dill and squeeze lime on top.
  • Place Saute pan over medium to high heat for two minutes until pan is hot. Add couscous and cook until golden brown. Add coconut milk, water, pinch of thyme, smidgen of rosemary, salt and pepper. Bring to a boil then reduce heat. Cook until most of the coconut milk has been absorbed. Plate and serve immediately.
  • Lay the pineapple on its side. With a large sharp nice cut evenly through, including the head. Leaving a 1/2 inch rim, carve out the inside of the pineapple - creating two natural bowls. When couscous is finished cooking, spoon into pineapple - collecting excess cocounut milk as you go. Place fish on top and garnish. Enjoy!
