½ cup brown sugar
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon ground black pepper
¼ cup pineapple preserves
1 onion, sliced
1 orange bell pepper, cut into long strips
1 red bell pepper, cut into long strips
½ (15 ounce) can mandarin oranges, drained and juice reserved
1 (8 ounce) can crushed pineapple, drained and juice reserved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork tenderloin in a shallow 9x13-inch; sprinkle with brown sugar, chili powder, garlic powder, and black pepper. Spread pineapple preserves over tenderloin. Arrange onion, orange bell pepper, and red bell pepper on and around tenderloin. Mix reserved juice from mandarin oranges and crushed pineapple in a small bowl; pour in at least 1/2 cup reserved juice.

FOR THE SPICE RUB
2 tsp salt
1/2 tsp ground pepper
1 tsp cumin
1 tsp chili powder ( i only had mexican chili powder so thats what i used)
1 tsp cinnamon
2 pork tenderloins (2 1/4- 2 1/2 lbs total)
2 Tbsp olive oil
FOR GLAZE
1 c dark brown sugar
2 Tbsp finely chopped garlic
1 Tbsp tabasco sauce or other hot sauce like texas pete

Steps:

  • 1. Preheat oven to 350. In a small bowl, mix together salt, pepper,cumin, chili powder and cinnamon. rub this into the tenderloin and let it sit for atleast an hour. I have let mine sit overnight and was really good that way too.
  • 2. Heat olive oil in ovenproof heavy skillet. I used my cast iron skillet.Put pork in and brown all sides, about 4 minutes total. Remove from heat, leaving pork in the pan.
  • 3. Make the glaze then press over the top of tenderloin (the glaze will look dry, but its ok, it wont be) I know this doesnt look like a glaze, more like damp brown sugar, it will turn to a glaze when it melts. Place skillet in the over and roast for about 20 minutes til center reaches 140 degrees. let pork sit in pan on top of stove, covered in foil, for about 10 minutes. Slice and serve.

1 teaspoon salt

1 20 oz. can pineapple chunks in juice, drained, juice reserved, pineapple set aside
1/2 cup brown sugar, packed
2 tablespoons soy sauce
3 tablespoons tomato paste
1 tablespoon cornstarch
2 tablespoons fresh parsley, minced

Steps:

  • 1. Season tenderloins with salt and pepper.
  • 2. Heat oil in large skillet over medium-high heat and brown tenderloins on all sides. Place in crock.

1 ¾ cups chicken broth
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon avocado oil
½ cup no-sugar-added apricot preserves
2 teaspoons sambal oelek, or to taste
2 teaspoons grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon sesame seeds

Steps:

  • Turn on an 8-quart multi-functional pressure cooker (such as Instant Pot®), select Saute function, and allow to preheat.

1/2 teaspoon ground cinnamon
