Time 45m

Yield 2 servings

Number Of Ingredients 11

1/2 cup chopped fresh flat-leaf parsley
1/4 cup toasted, skinless hazelnuts
1/4 cup olive oil
1 tablespoon fresh lemon juice, from 1/2 a lemon
1 teaspoon grated lemon zest, from about 1 lemon
1/2 teaspoon kosher salt
One 8-ounce package cremini mushrooms, cleaned and sliced 1/3 inch thick
1 small delicata squash (about 8 ounces), halved lengthwise, seeds removed and sliced crosswise in 1/4-inch-thick pieces
1 tablespoon plus 2 teaspoons olive oil
1 teaspoon kosher salt, divided
4 rainbow trout fillets

Steps:

  • Position an oven rack in the top third of the oven and preheat to 450 degrees F.

  • In a medium bowl, toss together the mushrooms, squash, 1 tablespoon of the oil, 1/2 teaspoon of the salt. Spread the mixture on a rimmed baking sheet and roast for 12 minutes or until the squash is tender and beginning to brown. Remove the vegetables from the oven and preheat the broiler to high.

BAKED TROUT WITH SHIITAKE MUSHROOMS, TOMATOES, AND GINGER

Baked Trout with Shiitake Mushrooms, Tomatoes, and Ginger image

Provided by Adrienne Inskeep

Categories     Ginger     Mushroom     Onion     Tomato     Bake     Quick & Easy     Low Cal     Trout     Healthy     Bon Appétit

Yield Makes 2 servings

Number Of Ingredients 10

Nonstick cooking spray
2 whole rainbow trout (about 12 ounces each), cleaned, boned, butterflied
2 green onions, chopped
2 large fresh shiitake mushrooms, stemmed, caps thinly sliced
1/2 cup chopped seeded tomatoes
2 teaspoons minced peeled fresh ginger
2 garlic cloves, minced
4 teaspoons soy sauce
2 teaspoons Asian sesame oil
Fresh cilantro sprigs

Steps:

  • Preheat oven to 400°F. Line large rimmed baking sheet with foil; coat with nonstick spray. Sprinkle fish with salt and pepper. Open fish like a book and arrange, skin side down, on prepared baking sheet.
  • Mix next 5 ingredients in bowl. Sprinkle mixture over fish, drizzle with soy sauce and sesame oil, then top with cilantro sprigs. Bake uncovered until fish is opaque in center, about 20 minutes.

Tips:

  • Choose the freshest trout possible. Fresh trout should have bright, clear eyes, red gills, and a firm, springy body.
  • Use a variety of mushrooms. Different mushrooms have different flavors and textures, so using a variety will add depth and complexity to your dish.
  • Don't overcrowd the pan. If you overcrowd the pan, the trout and mushrooms will steam instead of sautéing, which will make them soggy.
  • Cook the trout until it is just cooked through. Overcooked trout will be dry and tough.
  • Serve the trout immediately. Trout is best served hot out of the pan, so don't let it sit for too long before serving.

Conclusion:

Trout with mushrooms is a delicious and easy-to-make dish that is perfect for a weeknight dinner. By following these tips, you can create a flavorful and memorable meal that your family and friends will love.
