COCONUT CASHEW TUNA TARTARE

Coconut Cashew Tuna Tartare image

Feel free to tweak this any way you want, including adding more coconut milk. My wife is on record as preferring twice as much as I used here, which will give you a looser but much more luxurious mixture. This also needs a good amount of salt to bring the flavors together, so taste and adjust carefully. You could certainly use other salty seasonings like soy and/or fish sauce, but you already knew that. Serve with taro, wonton, or sweet potato chips.

SEARED AHI TUNA AND AVOCADO TARTARE

Seared Ahi Tuna and Avocado Tartare image

Michael Shrader of Nine Restaurant Group in Palm Springs, Florida, writes: "Both sides of my family cooked a lot when I was growing up, so I've had plenty of inspiration to draw on as a chef. From my mother's Sicilian heritage, I learned about homemade pasta, braised meats, and biscotti-before they became fashionable. My dad is part German, and he was known for his talents working the grill. On my days off from the restaurant, I cook for my wife at home. We tend to eat light, and I cook with foods that are in season since I've never been one for complicated dishes. It's just not my style. I'd rather have sliced tomatoes with a good olive oil or pasta with vegetables than something fussy." A sophisticated, fresh, and spicy dip for tortilla chips or baguette rounds.

SEARED AHI TUNA TARTARE WITH AVOCADO

Seared Ahi Tuna Tartare With Avocado image

From epicurious.com. I have to say, I had to muster up all of my willpower not to eat this all in one sitting. This is a lot like ceviche, without the long wait for the lime juice to "cook" the fish. If you're preparing this far ahead of time, you may want to add the avocado at the last minute (it will discolor if it sits for too long). I hope you like it!

SEARED TUNA WITH CAVIAR

Seared Tuna With Caviar image

Provided by Marian Burros

Categories     appetizer

Time 30m

Yield Eight servings

Number Of Ingredients 7

2 pounds center-cut yellow or blue fin tuna, 3 inches in diameter
1 egg white, beaten until foamy
1/2 cup fresh coarsely ground white pepper
1/2 teaspoon ground coriander seed
3 to 4 tablespoons grape-seed or safflower oil
8 cups mixed greens: combination of bibb, mache, radicchio and chicory, dressed with vinaigrette
Sauce (see recipe)

Steps:

  • Brush egg white on all sides of the tuna with a pastry brush.
  • Mix the ground pepper and coriander and press the tuna into this mixture, using as much of it as necessary to cover each side and the ends.
  • Heat a heavy saute pan and pour about half of the oil into the pan. Bring to the smoking point and carefully place the tuna in the pan. Sear each side until dark brown and crusty, adding more oil if needed to keep the tuna from sticking. Sear the ends as well. Each side should take about one to one and a half minutes. Remove the tuna and let it rest for at least 10 minutes before slicing.
  • Using a very sharp knife, cut the tuna into one-half- to one-third-inch slices, allowing three slices per serving.
  • Arrange the dressed salad greens on each of eight plates at 12 o'clock.
  • In a semicircle, overlap three slices of tuna below the greens, with the top edges of tuna resting on the salad. At the base of each piece of tuna, place a dollop of the sauce.

Tips:

  • Use sushi-grade tuna to ensure its freshness and quality.
  • Choose ripe avocados for a creamy and rich texture.
  • Season the tuna with salt, pepper, and sesame oil to enhance its flavor.
  • Use a sharp knife to dice the tuna and avocado into small, even pieces.
  • Garnish the tartare with sesame seeds, microgreens, and California caviar for a visually appealing presentation.
  • Serve the tartare immediately to maintain its freshness.

Conclusion:

Tuna and avocado tartare is a delicious and elegant appetizer that is perfect for any occasion. Its combination of fresh, flavorful ingredients and crispy wonton crisps creates a delightful experience that will impress your guests. Whether you are hosting a party or simply looking for a special dish to enjoy at home, this tartare is sure to be a hit.
