COMFORTING TUNA PATTIES
My grandmother and mother made these tuna patties on Fridays during Lent. I'm not the biggest fan of tuna, but it's perfect in this dish. These patties are even good cold the next day, if there are any leftovers. -Ann Marie Eberhart, Gig Harbor, Washington

TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.

Tips:
- Choose the Right Tuna: Opt for tuna packed in olive oil or water for a healthier option and avoid tuna packed in brine or vegetable oil.
- Don't Overcook the Tuna: To maintain its delicate texture and flavor, cook the tuna until it reaches an internal temperature of 125°F (52°C).
- Enhance the Filling with Vegetables: Add chopped vegetables like carrots, peas, corn, or bell peppers to the tuna filling for extra flavor, texture, and nutrients.
- Use a Variety of Herbs and Spices: Experiment with different herbs and spices to create a flavorful filling. Popular choices include parsley, dill, thyme, paprika, cumin, and black pepper.
- Don't Overwork the Pastry: Overworking the pastry can make it tough. Handle it gently and avoid kneading it excessively.
- Chill the Pastry Before Baking: Chilling the pastry before baking helps prevent it from shrinking and ensures a flaky texture.
- Egg Wash for a Golden Crust: Brush the pastry with an egg wash before baking to achieve a beautiful golden-brown crust.
