Put the olive oil, the chopped onion, the chopped garlic and the bay leaf in a saucepan and sauté over low heat until the onion start to turn slightly golden. Remove the bay leaf, add the tuna and season with a little salt and pepper. Stir and cook for about 3 to 4 minutes. Add the rice, stir and pour the water (twice the rice volume). Boil over medium-high heat. When starts boiling, reduce to low heat and cook the rice for about 10 to 12 minutes. When the rice is almost cooked, add the grated cheese and mix in the rice and tuna. Turn off the heat, season with a little more pepper and serve.

50 ml (1/4 cup) olive oil
Pepper (to taste)
225 grams (8 ounces) canned tuna
1 bay leaf
150 grams (5 1/3 ounces) grated cheese
1 medium onion
2 cloves of garlic
Salt (to taste)

Steps:

  • Drain the tuna and flake it with a fork; set aside.

2 cups brown rice
1 large onion, finely chopped
2 teaspoons curry powder
2 tablespoons butter
1/3 cup celery, chopped
2 tablespoons flour
2 cups milk
1/4 cup fruit chutney
185 g canned chunk style tuna, flaked & drained
salt
1 pinch nutmeg
2 tablespoons parsley, chopped
2 eggs, lightly beaten
1/2 cup grated tasty cheese

Steps:

  • Cook the riuce in boiling water until tender, drain thoroughly.
  • Gently fry the onion and curry powder in butter until softened, add the celery and cook another minute.
  • Sprinkle in the flour, stir for a minute or two and then gradually stir in the milk and cook, stirring until boiling.
  • Add the fruit chutney, tuna, salt, nutmeg, rice & parsley. Remove from heat & slowly stir in the eggs.
  • Turn into a 23cm x 12cm loaf tin, lined with aluminium foil, smooth top & sprinkle with the cheese.
  • Bake at 180.C for 35-45 mins or until browned, remove from oven and leave for about 5 mins before turning out.

Steps:

  • In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
  • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. 2 cups water
2 tablespoons olive oil, divided

1 cup frozen shelled edamame (green soybeans)
4 (4 ounce) tuna steaks
¼ teaspoon salt
1 bulb shallots, peeled and chopped
¾ cup water
1 tablespoon minced fresh chives
¼ teaspoon grated orange zest
1 tablespoon orange juice

Steps:

  • Place the rice and 2 cups water in a pot, and bring to a boil. Cover, reduce heat to low, and simmer 45 minutes.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in onion, and cook until tender. Season with thyme and 1/4 teaspoon pepper. Gently stir into the cooked rice.
  • Place the edamame in separate pot with enough water to cover, and bring to a boil. Cook 5 minutes, or until tender. Mix into the rice.
  • Heat remaining olive oil in a skillet. Rub tuna with remaining 1/4 teaspoon pepper and salt. Place tuna in the skillet, and cook to desired doneness. Set aside, and keep warm.
  • Place shallots in skillet. Increase heat to high, and pour in 3/4 cup water. Cook until liquid is reduced to about 1/2 cup, then stir in chives, orange zest and orange juice. Arrange fish over the rice and drizzle with the sauce to serve.

8 slices bread
2 cups milk
1 teaspoon anchovy paste, or more to taste
2 eggs, beaten
18 ounces Italian, oil-packed tuna
1 bunch parsley, chopped
1 tablespoon capers
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Arrange bread in a large baking dish. Pour milk over bread; allow to soak until bread is soggy. Remove bread and squeeze excess moisture from the bread. Discard milk.
  • Whisk anchovy paste with eggs in a bowl until dissolved.
  • Crumble tuna and moistened bread together in a large bowl. Add the egg mixture, parsley, capers, and Parmesan cheese; knead together until evenly blended and reasonably firm. Wrap the mixture in a clean cotton dishtowel and roll it up tightly, securing the two ends with string or elastic bands.

1 (8 ounce) package fat-free cream cheese
3 eggs
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1/2 teaspoon pepper
5 cups stuffing cubes or 5 cups dried seasoned bread cubes
1 cup skim milk
2 (12 ounce) cans whie albacore tuna in water, drained
2 tablespoons vegetable oil
paprika
Pam cooking spray

Steps:

  • Beat with mixer in a large bowl, cream cheese, eggs, dried dill weed, salt and pepper.
  • In another bowl, add two cubes dried bread cubes and 1 cup milk. Stir around. Set aside.
  • Add tuna. Break tuna apart with a fork while adding. Mix.
  • Add balance of seasoned bread cubes and the soaked break cubes.
  • Stir with spatula until mixed.
  • Add vegetable oil and mix.
  • Preheat oven 350*.
  • Spray Pam in a large loaf pan.
  • Pour loaf ingredients and smooth out.
  • Sprinkle paprika on the top.
  • Bake 1 hour or until top springs back to the touch.
  • Let cool at least 10-15 minutes.
  • Note: I used my spiced croutons which have chili powder and cumin. and butter. You might like to use thyme or sage along with the dill weed.
  • This keeps well.
  • You may serve with tartar sauce, cream gravy, ketchup, chili sauce or mayo or miracle whip on a sandwich.

5 tablespoons margarine

Spoon into a greased 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan. Sauté crumbs in remaining 2 tablespoons margarine until golden. Sprinkle over top of loaf. Bake in a preheated 350° F oven for 35 minutes.
