MEXICAN BISCUIT CASSEROLE

Mexican Biscuit Casserole image

I found this recipe in Midwest Living Magazine years ago and it has been a family favorite ever since. It's great warmed up in the microwave the next day, too! Note: I often times just use the Bisquick box recipe for biscuits and make a dozen to spread evenly over the casserole. I also have fun cutting them in different shapes on occasion.

Tips:

  • Use a combination of ground turkey and lean ground beef: This will give your casserole a more flavorful and satisfying taste.
  • Don't be afraid to experiment with different spices and seasonings: Mexican cuisine is all about big, bold flavors, so don't be afraid to add some heat with chili powder, cumin, and cayenne pepper.
  • Be sure to use a good quality salsa: This is one of the key ingredients in this casserole, so it's important to use a salsa that has a lot of flavor.
  • Don't overcook the turkey and beef: You want the meat to be cooked through, but you don't want it to be dry and tough.
  • Serve the casserole with your favorite toppings: Some popular options include sour cream, guacamole, pico de gallo, and shredded cheese.

Conclusion:

This Mexican-style turkey and biscuit casserole is a delicious and easy-to-make meal that is perfect for a busy weeknight dinner.
