1 (6 ounce) can tomato paste
½ cup ketchup
2 teaspoons white sugar

½ onion, chopped

I couldn't find a recipe on this site (or elsewhere) for basic meatloaf with caramelized onions in the mix-not meatloaf with a topping of caramelized onions or "stuffed". Because I wanted the caramelized onions to take center stage, for that reason, you won't find any tomato sauce, mushrooms, no cheese, no strips of bacon on top, etc. in this recipe. The recipe was found on lifeisaplate.com and modified to my specifications. You can substitute other types of ground meat or use other meat in combination: turkey, chicken, buffalo, turkey, etc. Use any preferable binder of your choice, for example-finely ground breadcrumbs, almond or walnut meal, masa harina, rice flour. Brown rice was the binder I chose and it was ground to medium-coarse consistency (similar to cornmeal). The recipe was cut in half because I like meatloaf on the small size and save the larger size when I am need of a doorstop.

1/4 cup unsalted butter
1 1/2 large yellow sweet onions, cut into 1-inch dice (Vidalia, Maui, Hermiston, etc.)

1/2 cup brown rice meal (read recipe ^intro)

Steps:

  • Melt the butter in a large pan on medium-low heat. Add the onions and sugar; cook until brown and sweet-approximately 20-30 minutes. Lower the heat if the onions are browning too quickly.
  • In a large mixing bowl, combine the meatloaf ingredients with the caramelized onions (including all those browned bits at the bottom of the pan!); Do not overmix.
  • Transfer the meatloaf mixture to an oiled or parchment-lined loaf pan. (I used a large soup spoon, patting the mixture down and into the corners of the pan. Use the back of the spoon to smooth the top of the loaf.) If desired, lightly sprinkle the top of the loaf with dried parsley.
  • Bake at 375 for 45-60 minutes or until the meatloaf is not longer pink in the center.
  • Servings are estimated. Cooking time includes caramelizing the onions.

2 lbs. ground turkey
1 cup fresh breadcrumbs
1 cup caramelized onions, chopped (see instructions below)
2 garlic cloves, minced
1 teaspoon ground sage
2 large eggs
3 tablespoons grated Parmesan cheese
3 tablespoons soy sauce
1 tablespoon Worcestershire sauce
Caramelized Onions (can be prepared ahead; should yield about 1 cup)
1 lb. onions, peeled and cut into 1/4-inch slices, 2 1/2 cups
1 tablespoon butter
1 teaspoon vegetable oil
1 teaspoon light brown sugar
salt and pepper to taste
POM Sauce
1/2 cup arils from 1 large POM Wonderful Pomegranate
1/2 cup bottled ketchup
1 tablespoon light brown sugar
2 tablespoons balsamic vinegar

  • Caramelized Onions: 1. Heat butter and vegetable oil over high heat until foamy and hot. 2. Add onions and stir to coat. Lower heat and cook; stir until onions are browned and soft, about 40 minutes. Add brown sugar and cook until brown and caramel colored, about 5 minutes. 3. Add salt and pepper to taste. Turkey Meat Loaf 1. Prepare fresh pomegranate juice.* 2. Preheat oven to 350°F. 3. In a bowl mix turkey, breadcrumbs, pomegranate juice, caramelized onions with all the pan juices, minced garlic, sage, eggs, Parmesan cheese, soy sauce and Worcestershire sauce. 4. Mix well using hands and form into a 9 x 5 loaf. 5. Place in a prepared loaf pan. 6. Bake in a preheated oven for about 1 1/2 hours. 7. Serve with 1 tablespoon of pomegranate sauce. POM Sauce: 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Mix ingredients together and heat to dissolve sugar. Serve on cooked turkey meat loaf. * For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.

2 medium onions (diced into small pieces)
3 tablespoons olive oil
1 tablespoon garlic (minced)
1 teaspoon thyme (dried)
2 eggs
1/4 cup sour cream

2 lbs ground beef
1/2 cup breadcrumbs
sea salt

Steps:

  • Heat oil in heavy pan, add onions, turn heat to low and let onions cook and caramelize, stirring every few minute until onions are nicely brown (about 30-40 min., don't rush this step, be careful not to burn onions), add garlic & thyme; cook about 2 minute more. When onions have cooked 15 min., preheat oven to 375.
  • While onions are cooking put ground beef in a medium bowl, let come to room temp, mix together eggs, sour cream horseradish and worcestershire sauce.
  • When onions are done, add bread crumbs and onion mixture to meat, season with salt and pepper, then add egg/sour cream mixture. Use your hands to GENTLY combine until all ingredients are mixed. Handle meat as litttle as possible.
  • Spray broiler or roasting pan with non-stick spray, form meat into a loaf shape and place on pan.
  • Bake about 1 1/2 hours or until meatloaf is nicely browned on the outside and internal temperature is 155-160 degrees.
  • Let meatloaf rest 10-15 minutes before cutting; while it rests, stir together sour cream, may and horseradish to make a sauce.

1 large onion, quartered

  • For gravy base:

Add 1 cup broth, herb sprigs, and bay leaf to drippings in pan. Continue to roast until thermometer inserted into thickest part of thigh registers 175°F, basting with 3/4 cup broth and pan juices every 30 minutes, about 2 hours 30 minutes longer for unstuffed and 3 hours longer for stuffed. Transfer turkey to platter; let stand 30 minutes (internal temperature will increase 5 to 10 degrees).
  • Strain pan juices into 8-cup measuring cup; spoon fat off top. Heat gravy base over medium heat. Whisk in flour, then pan juices. Boil until gravy is reduced to 7 cups, stirring occasionally, about 12 minutes. Season with salt and pepper.
