16 slices thin whole-grain bread
1 jar good-quality, store-bought chutney (such as Major Grey's)
8 ounces turkey breast, thinly sliced
3 ounces Brie, thinly sliced
8 butter or Bibb lettuce leaves

Steps:

  • 1. Spread each slice of bread with enough chutney to cover one side.
  • 2. Top half of the slices with turkey, Brie, and lettuce. Place the remaining eight slices of bread, chutney side down, on top of each sandwich.
  • 3. Slice each sandwich into quarters and arrange on a platter to serve. (Sandwiches may be assembled up to 4 hours in advance, covered with plastic wrap, and refrigerated.

5 tablespoons whole grain honey mustard or 5 tablespoons Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley
1 teaspoon olive oil
1/3 cup chopped walnuts
1/3 cup chopped red onion
4 whole grain buns (6 inches long) or 4 whole grain buns, halved lengthwise and lightly toasted (6 inches long)
3 ounces baby spinach leaves (about 2 cups)
1 lb deli-sliced smoked turkey breast
8 ounces brie cheese, cut into 8 slices

Steps:

  • Combine the mustard, vinegar, parsley, and oil.
  • In another bowl, combine the walnuts and onions; stir in 2 Tbsp of the mustard mixture.
