TURKEY CUTLETS MARSALA
Here is a recipe adapted from one written by Elizabeth David, the erudite British cookbook writer who died in 1992. Jill Norman beautifully reanimated it in her 2010 book "At Elizabeth David's Table" and we took it along ever so slightly in the name of ease: lightly browned cutlets in a sauce of Marsala wine. The cooking is gentle, and takes little time. It pairs nicely with a mushroom risotto or a pile of rice.

Steps:
- Season cutlets aggressively with salt and pepper, then lightly dust them with flour.
- Melt the butter in a large sauté or frying pan set over medium-high heat, and when it begins to foam, add the turkey cutlets to the pan. Turn the heat down to medium, and cook, gently, for 3 minutes a side, being careful not to allow the butter to blacken.
- When the second side is just about done, pour the Marsala over the cutlets, and allow it to bubble and combine with the butter. Now do the same with a splash or two of the chicken stock. Cook in the pan for 2 or 3 minutes more.
TANGY TURKEY SAUTE
This utilizes turkey breast slices and really turns it into something special. With garlic, thyme and lots of fresh mushrooms, this dish from Amy Wenger of Severance, Colorado really packs the flavor. But the really special aspect of it is the use of Marsala wine. Marsala is an rich Italian dessert wine used often in cooking. Most of the alcohol is cooked out, leaving a delicious sauce behind, but if you don't want to use the wine, feel free to substitute chicken broth.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your turkey marsala. Look for a good-quality turkey breast or thigh, and use fresh mushrooms, spinach, and herbs.
- Brown the turkey well: Browning the turkey before simmering it in the marsala sauce will help to develop its flavor and give it a nice color.
- Don't overcrowd the pan: If you're using a small pan, cook the turkey in batches so that it doesn't overcrowd and steam instead of browning.
- Use a good-quality marsala wine: The type of marsala wine you use will have a big impact on the flavor of the sauce. Look for a dry or semi-dry marsala that is made with 100% Italian grapes.
- Simmer the sauce until it's thickened: The sauce should be thick enough to coat the back of a spoon. If it's too thin, let it simmer for a few minutes longer.
- Serve the turkey marsala with your favorite sides: Some popular sides for turkey marsala include mashed potatoes, roasted vegetables, or rice.
