1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
½ cup ketchup
2 teaspoons white sugar
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano

1 teaspoon Worcestershire sauce
1 (14.5 ounce) can Italian-style stewed tomatoes, undrained
3 pounds ground turkey
1 sleeve roasted vegetable-flavored buttery round crackers (such as Ritz®), crushed
1 onion, diced
1 green bell pepper, diced
2 eggs, slightly beaten
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons Worcestershire sauce
1 clove garlic, minced
2 teaspoons ground black pepper
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.

1 1/2 cups bread crumbs, homemade from good soft and sweet bread
2 eggs, lightly beaten
1 1/2 cups herb and oil marinated sun-dried tomatoes, pureed in a food processor, plus oil for griddle, preferably with garlic, herbs and dried tomatoes
1 tablespoon chopped fresh sage leaves
Pinch salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix all of the ingredients thoroughly in a large bowl, reserving 1/2 cup of sun-dried tomato puree. Form the mixture into a loaf and transfer it to a baking dish. Cover and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 1 hour. Remove the baking dish from the oven. Spread the reserved puree on top, then return it to the oven, and bake uncovered for 10 to 15 minutes.
  • When ready to serve, heat up a little oil from the sun-dried tomatoes in a nonstick skillet or griddle. Cut the meatloaf into about 1-inch slices and add to the skillet. Crisp on both sides for an extra layer of texture.

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano

2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided

1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

2 tablespoons butter
1 onion, finely chopped
1 small red pepper, cored,deseeded & chopped
1 clove garlic, minced
1 lb lean ground beef
1/2 cup soft white breadcrumb
1/2 teaspoon cayenne
1 tablespoon lemon juice
1/2 teaspoon grated fresh lemon rind
2 tablespoons chopped fresh parsley
1 cup short pasta (fusilli, macaroni, etc.)
2 tablespoons butter
1 tablespoon flour
1 cup milk
2 tablespoons half-and-half
1 pinch nutmeg
salt
pepper
2 ounces grated sharp cheddar cheese
1 tablespoon freshly grated parmesan cheese

Steps:

  • Prepare meat mixture: Melt butter in pot over medium heat; saute onion, pepper& garlic until onion is translucent- about 4 minutes.
  • Put meat into a large bowl& mash it with a wooden spoon until it becomes a sticky paste.
  • Add the fried vegetables, bread crumbs, cayenne, lemon juice, lemon rind& parsley.
  • Season with salt& pepper, combine well and set aside.
  • Prepare cheese sauce: Melt butter in a pot; stir in flour& cook for 1 minute.
  • Gradually pour in milk, stirring constsntly.
  • Stir in cream and season with nutmeg, salt& pepper.
  • Simmer for 5 minutes to thicken& reduce sauce.
  • Lower heat, stir in cheeses and stir until melted.
  • Meanwhile, cook pasta in boiling, salted water until el dente.
  • Drain well& stir into cheese sauce.
  • Lightly grease a 2 lb loaf tin.
  • Spoon in half the meat mixture& level the surface.
  • Cover with the pasta mixture.
  • Spoon in the rest of the meat mixture.
  • Cover with tin foil and bake in preheated 350F oven for 45 minutes.
  • Remove foil and continue cooking for another 15 minutes.

1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.
