Provided by Ina Garten

Categories     main-dish

Time 2h10m

Yield 8 to 10 servings

Number Of Ingredients 12

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

Tips:

  • Mise en Place: Before starting, ensure all ingredients and equipment are ready. This helps streamline the cooking process.
  • Seasoning: Use a variety of herbs and spices to add flavor to the meatloaf. This recipe suggests garlic, onion, thyme, rosemary, sage, oregano, salt, and pepper, but you can adjust the seasonings to your taste.
  • Meat Selection: Use a combination of ground turkey and ground pork for a moist and flavorful meatloaf. The ratio of turkey to pork can be adjusted based on personal preference.
  • Breadcrumbs: Use fresh, soft breadcrumbs rather than dry, stale ones. This will help keep the meatloaf moist and tender.
  • Eggs: Eggs act as a binder in the meatloaf, helping to hold all the ingredients together. Use large eggs for the best results.
  • Mixing: Mix the ingredients gently to avoid overworking the meat, which can result in a tough meatloaf.
  • Baking: Bake the meatloaf in a preheated oven. The suggested temperature is 375°F (190°C). Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for safe consumption.
  • Resting: After baking, let the meatloaf rest for 10-15 minutes before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful meatloaf.

Conclusion:

This no-ketchup or tomato turkey meatloaf is a healthier and flavorful alternative to traditional meatloaf recipes. It's packed with savory herbs, spices, and vegetables, making it a delicious and satisfying meal. Whether served with mashed potatoes, roasted vegetables, or a simple salad, this meatloaf is sure to be a hit with your family and friends. Enjoy!
