Time 1h

Yield 6 servings

Number Of Ingredients 16

1 28-ounce can chopped tomatoes with juice
1 tablespoon canola oil
1 medium onion, finely chopped
2 large garlic cloves, minced
1 pound ground turkey breast
1/4 teaspoon ground black pepper
1 teaspoon medium-hot chili powder (more to taste)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup raisins
1 tablespoon plus 2 teaspoons cider vinegar or rice vinegar
Salt to taste
1 tart apple, peeled, cored and finely chopped
12 corn tortillas
2 cups shredded cabbage (about 6 ounces)
Salsa and crumbled queso fresco as desired

Steps:

  • Pulse the canned tomatoes with juice in a food processor fitted with the steel blade until puréed. Set aside.
  • Heat the canola oil in a large, heavy skillet over medium heat and add the onion. Cook, stirring often, until onion is tender, about 5 minutes. Add the garlic and cook, stirring, until it is fragrant, 30 seconds to a minute. Turn the heat up to medium-high and add the ground turkey. Season to taste with salt and pepper and cook, stirring and breaking apart the meat, until it is lightly browned, about 8 minutes. If the meat has released any liquid into the pan, carefully pour it off, then stir in the pepper, chili powder, cinnamon, cloves and raisins and stir together for 1 minute.
  • Add the puréed tomatoes, 1 tablespoon of the vinegar and salt to taste, and bring to a simmer. Simmer 15 minutes over medium-low heat, stirring often. Add the apple and continue to simmer for 10 minutes, or until the mixture is thick and meaty. Taste and adjust the seasoning.
  • Cover the cabbage with cold water and let sit for 5 minutes. Drain and spin dry. Toss with the remaining vinegar. Heat the tortillas and spoon the picadillo onto each one. Top with shredded cabbage, garnish with salsa and crumbled queso fresco if desired, and serve.

TURKEY PICADILLO SLOPPY JOES

Turkey Picadillo Sloppy Joes image

Provided by Marcela Valladolid

Time 35m

Yield 6 servings

Number Of Ingredients 15

2 tablespoons vegetable oil
1/3 cup finely diced white onion
1/4 cup finely diced celery
1/4 cup finely diced carrot
1 ear corn, shucked and kernels removed or 1 cup frozen corn, thawed
2 garlic cloves, minced
2 jalapenos, stemmed and deveined
1 pound ground turkey
1 1/2 cups tomato puree
1 bay leaf
2 sprigs fresh thyme, leaves removed and chopped
2 springs fresh oregano, leaves removed and chopped
Salt and freshly ground black pepper
6 hamburger buns
Serving suggestion: Pickled jalapenos and avocado slices.

Steps:

  • In a large saucepan, heat the oil over medium-high heat. Add the onion and celery and cook until translucent. Add the carrot, corn kernels, garlic, and jalapeno. Cook for 5 minutes. Add the ground turkey and saute until cooked through. Stir in the tomato puree, bay leaf, thyme, oregano and salt and pepper, to taste. Reduce the heat to medium, cover the pan and cook for 10 minutes. Discard the bay leaf.
  • Put about 1/4 cup of the picadillo into each hamburger bun. Serve warm with pickled jalapenos and avocado slices.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and prevent any mishaps.
  • Choose the Right Meat: For the best results, use ground turkey that is at least 85% lean. This will help to keep the picadillo from becoming too greasy.
  • Season Generously: Picadillo is a flavorful dish, so don't be afraid to season it well. Use a combination of chili powder, cumin, oregano, and garlic powder to create a delicious and authentic flavor.
  • Cook the Meat Thoroughly: Make sure to cook the ground turkey until it is no longer pink in the center. This will help to prevent foodborne illness.
  • Don't Overcook the Vegetables: The vegetables in picadillo should be tender but still have a slight crunch. Overcooking them will make them mushy and bland.
  • Serve with Traditional Accompaniments: Picadillo is traditionally served with rice, beans, and tortillas. You can also serve it with your favorite Mexican sides, such as guacamole, salsa, and sour cream.

Conclusion:

Turkey picadillo is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give turkey picadillo a try!
