Number Of Ingredients 11

1 pint grape tomatoes
2 tablespoons olive oil
1/4 teaspoon kosher salt
2 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1/2 cup mayonnaise
1/4 cup whole-grain mustard

TURKEY TEA SANDWICHES

Provided by Ina Garten

Yield 32 sandwiches; 8 to 10 servings

Number Of Ingredients 7

3/4 pound (12 ounces) cream cheese, room temperature
1/2 cup minced scallions (white and green parts)
Pinch kosher salt
Pinch freshly ground black pepper
1 loaf dense raisin-nut bread, unsliced
8 thin slices fresh or smoked turkey breast
Fresh basil leaves

Steps:

  • For the scallion cream cheese, combine the cream cheese, scallions and the salt and pepper in an electric mixer fitted with a paddle attachment. Do not whip.
  • For the sandwiches, have the store slice the bread lengthwise on a meat slicer into 1/4-inch-thick slices. (If that isn't possible, you can slice it crosswise with a very sharp knife.)
  • Lay out 8 slices of bread and spread them all with a thin layer of scallion cream cheese. Place a single layer of turkey on half the slices, cutting the edges to fit the bread. Place the basil leaves randomly on top of the turkey. Top with the other 4 slices of bread, cream cheese side down. Lay the sandwiches on a baking sheet covered with parchment paper, cover with damp paper towels and wrap the sheet with plastic. Refrigerate until the cream cheese is cold and firm. Place the sandwiches on a cutting board and, with a very sharp knife, cut off the crusts. Cut each large sandwich in half crosswise, and then cut each half diagonally, twice, to make a total of 8 small triangles. (If the bread was cut crosswise, follow the assembly directions, then cut off the crusts and cut diagonally, twice, to make 4 small triangles.) Serve chilled.

Tips:

  • To make the perfect tea sandwiches, start with fresh, high-quality ingredients. Use soft, fluffy bread that's not too thick or too thin. Aim for a bread-to-filling ratio of about 2:1. Using high-quality mayonnaise makes a big difference in the flavor of the sandwiches. If you can, make your own mayonnaise using fresh eggs and oil.
  • Be careful not to overmix the filling. Overmixing can make the filling tough and dry. Mix just until the ingredients are combined.
  • When assembling the sandwiches, spread the filling evenly over the bread. Don't pile it on too thickly, or the sandwiches will be difficult to eat. Cut the sandwiches into small triangles or squares for a fun presentation.
  • Serve the tea sandwiches immediately, or wrap them tightly in plastic wrap and refrigerate them for up to 24 hours. If you're making the sandwiches ahead of time, let them come to room temperature for about 30 minutes before serving.
  • Accompany the tea sandwiches with your favorite tea or coffee. You can also serve them with a side of fresh fruit or salad.

Conclusion:

Turkey tea sandwiches are a classic party food that is both delicious and easy to make. You can use different varieties of bread and fillings to create different flavor combinations, so the possibilities are endless. You also can make them ahead of time, making them a great option for busy hosts and hostesses. So next time you're looking for a quick and easy appetizer or snack, give turkey tea sandwiches a try. You won't be disappointed!
