2 tablespoons butter
2 eggs, beaten
3 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
¾ teaspoon salt
⅛ teaspoon ground black pepper
1 pinch nutmeg
½ cup fine bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.
  • Combine flour, sugar, baking powder, salt, pepper, and nutmeg in a bowl and stir into turnips. Transfer mixture to a baking dish.
  • Combine bread crumbs and melted butter and sprinkle on top of turnip mixture.

8 ounces country ham, cubed (see Cook's Note)
1/3 cup apple cider vinegar
1 pound stemmed turnip greens (see Cook's Note)
Freshly cracked black pepper
4 cups low-sodium chicken stock (one 32-ounce carton)

Steps:

  • Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  • Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  • Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

2 can(s) bush's turnip greens, drained** see note**
1 can(s) cream of mushroom soup
1 c mayonnaise
3 Tbsp red wine vinegar
4 eggs, slightly beaten
salt and pepper
1/2 c bread crumbs
1/2 c grated cheddar cheese

Steps:

  • 1. Mix all the wet ingredients together, then pour into a casserole dish. Add as much salt and pepper as you wish. She used a couple of shakes, probably about 1/4 teaspoon of each.
  • 2. Top with bread crumbs and cheese.
  • 3. Bake one hour at 350 degrees
  • 4. She has one of those big square Corning Ware casserole dishes she uses. Note 11/15/12 I made this for a work luncheon. It fits in a 8x8 or 9x9 square baking pan. My MIL must have made a doube batch because her dish was much larger.

54 ounces Mixed greens (do NOT drain; (I use Glory brand seasoned mixed greens (canned))
15 ounces condensed soup (I use chicken; you can use cream of mushroom or celery )
1 pan prepared cornbread (day-old and crumbled)
1 cup chopped sweet yellow onion
1 lb. ground sausage (cooked and drained)
1 tablespoon pepper sauce (Trappey's Louisiana peppers in vinegar)
½ teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes (optional)

Steps:

  • Preheat oven to 350 degrees
  • Prepare a pan of cornbread (best if the cornbread is made a day or two ahead); crumble into small pieces
  • In a large skillet, cook the onion and sausage; drain if there's excess oil
  • In a large bowl, combine greens with their juice and the condensed soup
  • Fold in cooked sausage and onions, crumbled cornbread; season with Trappey's pepper sauce, salt and pepper; sprinkle in red pepper flakes (optional)
  • Transfer to ungreased baking dish and bake uncovered for 30 minutes, or until most of the liquid is absorbed

1 pan of baked corn bread
1 can(s) cream of chicken soup
1 onion chopped
1 stick margarine melted

Steps:

  • 1. In a small casserole dish melt one stick of margarine in a 350* oven. Crumble a layer of cornbread in margarine and layer of turnip greens (DO NOT DRAIN TURNIP GREENS), a layer of onion, and a layer of cream of chicken soup. Repeat the layers ending with cornbread. Bake for 30 to 35 minutes.
