Traditional Gujurati style curry made with minced lamb

Number Of Ingredients 17

2 onions, chopped
50g butter
3 tbsp vegetable oil
6 whole cloves
6 whole black peppercorns
3 small pieces of cassia bark or about an inch piece of cinnamon
1 tbsp coriander seeds
2 tbsp cumin seeds
1 tbsp garam masala
1 tsp turmeric
1 tin good quality (not sour) plum / san marzano tomatoes
2 -5 finger chillis (depending on your heat preference), chopped
5 cloves garlic
2 inch piece of ginger root
3 tsp salt
500g very lean lamb mince
1 small cup frozen peas

Steps:

  • Roast the cumin and coriander seeds in a dry frying pan until fragrant and then grind in a pestle and mortar or a spice grinder. This is known as 'dhana-jeeru' and features frequently in Indian cooking.
  • Melt the butter with the oil in a large pan and add the onion, cloves, cassia (or cinnamon), and peppercorns. Cook, stirring occasionally, over a medium high heat until the onion is well browned.
  • Discard the cassia (or cinnamon). Add 1 tablespoon of the dhana-jeeru mix, the garam masala, and the turmeric and fry for about 30 seconds stirring.
  • Add the tin of tomatoes and break them up with a spatula. Peel and mince the garlic and ginger and add to the pan with the chillis.
  • Cook the mixture over a medium heat for about 10 minutes, until the oil separates from the mixture at the edges.
  • Add the minced lamb and break up and mix into the mixture. Cover and cook over a low simmer for 35-45 minutes, adding the peas 10 minutes before the end. Check the seasoning and add more salt and garam masala if reqired.
  • Like most curries, this dish is best when cooled then reheated to allow the flavours to infuse, but this is optional. Reheat in the pan and serve with rice and / or chapattis.

1 tsp Fresh ginger (Peeled and finely chopped, 1 x 2.5cm/1inch piece fresh root ginger. See Note 3.)
3 tbsp Curry powder (See Note 4.)
400 g Tinned tomatoes ((1 Can))
1 tsp White sugar
100 g Peas

Steps:

  • Heat the oil in a large non-stick frying pan and cook the onion and garlic over a low heat for 2 - 3 minutes.
  • Add the mince and ginger and cook until browned (about 5 minutes).
  • Then add the curry powder, sugar, tinned tomatoes PLUS half a can of water (so fill the empty tomato can halfway and splash it in).
  • Cook for 20 minutes, stirring occasionally until thickened.
  • Add the peas to heat through for a minute or two just before serving.

2 lbs ground beef or 2 lbs ground lamb
1 cup oil
1 medium onion (diced then blended)
1 small onion (chopped)
2 whole canned tomatoes
1 tablespoon tomato paste
2 tablespoons ginger-garlic paste
3 teaspoons lemon juice
3 tablespoons sugar
3 teaspoons turmeric
3 teaspoons ground cumin
3 teaspoons ground coriander
2 teaspoons paprika
2 teaspoons curry powder
2 teaspoons garam masala
1/4 teaspoon cumin seed
1/4 teaspoon fennel seed
1/4 teaspoon dried mint
2 teaspoons salt
2 teaspoons pepper
1 -3 chili pepper (optional)

Steps:

  • Fry up your sliced onion until golden brown then add your blended onions and cook until it dry & darker golden brown. Add ginger garlic paste.
  • Add your fennel seeds, turmeric, paprika, salt & pepper, red curry powder& cumin seeds. Cook 3 minute You can drizzle in a little more oil if needed.
  • Add tomatoes and lemon juice stir well keep simmering.
  • Add your red and green peppers/capsicums. Keep simmering till mixture is paste form.
  • Add your dried herbs ground cumin; ground coriander and sugar cook 2min, and then add meat.
  • Cook for 5-7 min (until meat is no longer red).
  • Add 1-2 cups of water simmer 20 minutes (until almost dry).
  • Keep simmering add your Garam Masala and cilantro with a 3 tbl of oil.

  • Choose the right lamb mince: Look for lamb mince with a good fat content (at least 20%) for the best flavor and texture.
  • Brown the mince well: Browning the mince is essential for developing flavor and preventing it from becoming dry.
