Time 4h20m

Yield 3

Number Of Ingredients 9

1 ½ pounds top round, London Broil cut
1 tablespoon meat tenderizer
⅓ cup vegetable oil
2 teaspoons lemon juice
2 teaspoons seasoning salt
¼ teaspoon lemon pepper
2 cloves garlic, minced
4 teaspoons chopped fresh parsley
2 teaspoons tarragon vinegar

Steps:

  • Score top and bottom of meat with a 1 1/2 inch square pattern, and score the side. Sprinkle meat liberally with unseasoned meat tenderizer, then pierce with fork 1/8 inch apart and at least half-way through the meat on both sides. Sprinkle lightly with water, and rub in tenderizer. Place on a plate, cover, and set aside for an hour.
  • In a small bowl, mix together oil, lemon juice, seasoned salt, lemon pepper, garlic, parsley, and tarragon vinegar. Pour marinade over meat, reserving a portion to be used for brushing (Note: DO NOT mix the reserved marinade with the meat; set aside for later). Pour remaining marinade over meat, recover dish and refrigerate for three hours, turning every half hour.
  • Preheat grill for hot heat.
  • Lightly oil grate, and position it 2 inches above the coals. Place meat on grill, and cook for 5 minutes. Turn meat over, brush with marinade, and cook for another 5 minutes.

LONDON BROIL

Although the marinade helps tenderize this large cut of meat, you should also make sure to slice it very thinly against the grain on a slight bias. We found that a serrated knife works best.

Time 9h30m

Number Of Ingredients 7

1 cup cola
1/4 cup red-wine vinegar
1/2 small white onion, grated
1 1/2 tablespoons garlic, chopped (from 3 garlic cloves)
Coarse salt and freshly ground pepper
1/4 cup safflower oil, plus more for grill
1 London broil (5 to 6 pounds; 2 1/2 inches thick)

Steps:

  • Combine cola, vinegar, onion, garlic, 1 teaspoon pepper, and the oil in a bowl. Place steak in a large resealable plastic bag, and pour marinade over steak. Seal bag, pressing out excess air. Refrigerate at least 8 hours.
  • Let steak (in bag) stand at room temperature 1 hour. Remove steak from marinade, and discard marinade. Brush off any remaining onion and garlic from steak to prevent burning, and season with 1 tablespoon salt and 1 teaspoon pepper.
  • Meanwhile, preheat grill to medium-high, and brush grates with oil. Grill steak until internal temperature reaches 115 degrees for medium-rare (residual heat will continue to cook meat), 10 to 11 minutes per side. Transfer steak to a cutting board, and let rest, tented with foil, at least 15 minutes and up to 1 hour. Very thinly slice steak against the grain, and serve warm or at room temperature.

### Tips: - **Use flank steak or skirt steak.** These cuts of beef are relatively inexpensive and flavorful, and they cook quickly. - **Marinate the steak for at least 30 minutes.** This will help to tenderize the meat and add flavor. - **Cook the steak over high heat.** This will help to create a nice crust on the outside of the steak while keeping the inside juicy. - **Let the steak rest for 5-10 minutes before slicing.** This will help to keep the juices in the steak. - **Serve the steak with your favorite sides.** Some popular options include mashed potatoes, roasted vegetables, and grilled asparagus. ### Conclusion: London broil is a classic dish that is easy to make and always a crowd-pleaser. By following the tips above, you can make a delicious and juicy London broil that your family and friends will love. So next time you're looking for a quick and easy weeknight meal, give London broil a try. You won't be disappointed!
