This is reported to be Jay Leno's favorite recipe! The recipe multiplies easily for a party, just be sure to use extra pans as needed so as not to crowd the wings while roasting. Adapted from RecipeFinders.

Number Of Ingredients 9

12 chicken wings or 24 chicken drummettes
2 tablespoons olive oil
1 tablespoon garlic powder or 1 tablespoon granulated garlic
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
2 tablespoons hot sauce, to taste
4 garlic cloves, chopped
chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • If using whole wings, disjoint wings and remove tips; you should have 24 drumettes.
  • In a large bowl, toss the chicken with the olive oil, garlic powder, salt and pepper. Place on a rack in a baking pan.
  • Roast the chicken wings or drumettes in preheated oven until done, about 30 minutes.
  • Meanwhile, to make sauce, place the marinara sauce, hot sauce and garlic in a blender or food processor and blend to puree garlic.
  • When the wings are done, remove from the oven, and toss with half the sauce. Leave the oven on. Return wings to oven for 10 more minutes .
  • Sprinkle the wings with parsley.
  • Serve with the remaining sauce on the side to dip the wings into. Enjoy!
  • This is good served with a good blue cheese or gorgonzola dip too!

Peanut oil, for frying
24 whole chicken wings
All-purpose flour, for dredging
Coarse salt and freshly ground pepper
1/4 cup olive oil
2 crushed cloves garlic, plus more, if desired
1 can (28 ounces) peeled, whole tomatoes
2 tablespoons chopped fresh parsley
1/4 cup hot sauce, plus more to taste
1/2 tablespoon garlic powder

Steps:

  • Line a baking sheet with paper towels. Heat 4 inches peanut oil in a medium stockpot over high heat until a deep-fry thermometer registers 400 degrees. Dredge wings in flour, shaking to remove excess flour. Add wings to hot oil, and fry until dark golden brown, 14 to 18 minutes. Transfer to prepared baking sheet; season with salt and pepper.
  • Meanwhile, heat olive oil in a small saucepan over medium heat. Add crushed garlic; cook until fragrant, about 4 minutes. Remove garlic from oil and discard. In a medium bowl, crush tomatoes with your hands. Add to olive oil; cook, stirring occasionally, until heated through. Add parsley, salt, and pepper; reduce heat to low and simmer for 20 minutes. Add hot sauce and garlic powder; cook for 3 to 4 minutes. Keep warm until ready to use.
  • In a large bowl, toss wings with 1/2 cup of sauce. Serve immediately with remaining sauce on the side.

LEMONY ROASTED CHICKEN WINGS



Lemony Roasted Chicken Wings image

These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

2 pounds very small potatoes, such as fingerlings, whole, or use medium-size yellow-fleshed potatoes, cut in halves or wedges)
3 pounds chicken wings, preferably drumettes
Salt and pepper
Red pepper flakes, to taste
3 tablespoons extra-virgin olive oil
6 small lemons, cut into 1/4-inch thick half-moon slices
6 large rosemary sprigs, leaves stripped
8 garlic cloves, minced, or 1/2 cup chopped green garlic shoots
1 cup dry white or rosé wine
Pinch of dried oregano (optional)

Steps:

  • Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
  • Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
  • Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
  • Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
  • Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.

2 pounds chicken wing pieces
¼ cup margarine, melted
¼ cup hot sauce (such as Frank's RedHot ®)
6 cloves garlic, chopped
1 (1 ounce) envelope dry onion soup mix
1 tablespoon lemon juice
1 pinch dried basil

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Preheat oven to 350 degrees F (175 degrees C).
  • Fry chicken in the hot oil, working in batches, until no longer pink in the center and is crispy on the outside, 10 to 15 minutes per batch. Transfer chicken to a paper towel-lined plate using a slotted spoon; set aside until cool enough to touch.
  • Stir margarine, hot sauce, garlic, onion soup mix, lemon juice, and basil together in a bowl until sauce is smooth.
  • Put chicken in a large resealable bag; add the sauce, seal the bag, and shake until wings are coated. Spread wings into a baking sheet.

3 tablespoons vegetable oil or 3 tablespoons extra virgin olive oil
1 lb chicken liver
1 teaspoon garlic, minced (one large clove)
1 (28 ounce) can whole tomatoes or 1 (28 ounce) can low-sodium tomatoes, cut up
2 cups green peas, freezer section
1 1/2 teaspoons dried basil
1/2 teaspoon black pepper

Steps:

  • Heat 2 tbsp of the oil in a skillet on med-high heat.
  • Add chicken livers and garlic and saute 5 minutes.
  • Stir in tomatoes, green peas, basil and black pepper.
  • Bring to a boil, then reduce to low and simmer 5 minutes.
  • Serve over hot pasta (I prefer linguine) or hot rice.
