Tips:

  • Use quality ingredients. Using fresh, high-quality ingredients will result in a better-tasting fudge. Choose ripe cherries, and use real vanilla extract (not imitation).
  • Don't overcook the fudge. Overcooking will make the fudge grainy and crumbly. Cook it just until it reaches the desired temperature (234°F/112°C).
  • Let the fudge cool completely before cutting it. This will help it to set properly and prevent it from crumbling.
  • Store the fudge in an airtight container in the refrigerator. It will keep for up to 2 weeks.
  • To make cherry-chocolate fudge, add 1 cup of chopped dark chocolate to the fudge mixture before pouring it into the pan.
  • To make maple-cherry fudge, replace the white sugar with 1 cup of maple syrup.
  • To make nut-cherry fudge, add 1 cup of chopped walnuts, pecans, or almonds to the fudge mixture before pouring it into the pan.
