VANILLA RAISIN BREAD
This is my favorite raisin bread. I got the recipe from a bread machine recipe exchange years ago. It is not spiced, but it is a very rich tasting white bread with vanilla flavored plump raisins throughout. It's a high riser too, very soft and light! The prep time is only as long as it takes you to measure the ingredients. My machine's raisin cycle beeps after a little over 1 hour so I get everything started, then start soaking my raisins. They are always ready to go when the machine beeps.

- Light crust would work well with this bread.
- After starting the machine, place the raisins in a bowl or cup and add the vanilla extract.
- Soak raisins for 1 hour; drain.
- Add the raisins when your machine beeps or signals to add additional ingredients.
- Continue with the baking cycle.

Steps:
- Select basic or SWEET setting.
- Special Notes: The recipe calls for 2 tsp of yeast, but I find this way too much yeast- blows the top off the machine!
- This makes a 1 1/2 lb loaf which basically fills my 2 lb machine.
- DO use pure vanilla extract for best results.
- If you don't have the time to soak the raisins ahead of time (I never do) just microwave the raisins and vanilla for 1 minute on high or med-high in a micro-safe bowl.

Tips for Perfect Vanilla Raisin Bread Using ABM:
- Accurate Measurements: Use a kitchen scale for precise measurements of ingredients. This ensures consistent results and a perfect loaf every time.
- Fresh Ingredients: Always use fresh, high-quality ingredients, especially the yeast and milk. Fresh ingredients contribute to the best flavor and texture.
- Proofing the Yeast: Before adding the yeast to the bread machine, proof it in warm water with a bit of the sugar. This activates the yeast and helps ensure proper rising.
- Mixing the Dough: Follow the recipe's instructions carefully when mixing the dough. Over-mixing can result in a tough, dense loaf.
- Raisin Soaking: Soaking the raisins in warm water or rum before adding them to the dough plumps them up and prevents them from drying out during baking.
- Proper Baking: Ensure the bread machine is preheated before adding the dough. Follow the recommended baking cycle and check the loaf for doneness by inserting a toothpick or skewer. It should come out clean when inserted into the center.
Conclusion:
Homemade Vanilla Raisin Bread made in an ABM is a delightful treat that combines classic flavors and convenience. By following these tips and using the detailed recipe, you can create a soft, moist, and flavorful loaf that's perfect for breakfast, snacks, or as a gift. Remember, practice makes perfect, so don't be discouraged if your first loaf doesn't turn out exactly as expected. Keep experimenting with different ingredients and techniques until you master the art of baking delicious vanilla raisin bread in your ABM.
