GRILLED VEAL CHOPS WITH LEMON-MUSTARD-TARRAGON BUTTER
This is one of a series of recipes I have from a winery. They unfortunately do not put the chef on the recipe page but on the tasting notes which I did not keep. So for lack of a better source, I'll call this the VSW series. I have not tried most of them, but I want to hang on to them so I'm posting them here. Chefs notes: Grilled outdoors or broiled indoors, there's nothing like the perfect veal chop with a tart herb butter served alongside a fresh pasta and maybe some thin green beans dressed in olive oil.

Steps:
- Heat coals in a grill until they are covered with ash (mesquite does magic with grilled meats). Season the veal chops with salt and pepper, then place on the grill and cook to desired doneness.
- While the chops are grilling, place the soft butter in a small mixing bowl. Add the other ingredients and incorporate them well with a fork. Season to taste with salt and pepper. (If making the herb butter far ahead, spoon onto a sheet of wax paper and form a log which can easily be divided later, then refrigerate.).
- When ready to serve, add a dollop of the herb butter atop each veal chop and serve immediately.

ROASTED VEAL CHOPS WITH MADEIRA AND PARSNIPS
A favourite recipe of mine from LCBO Food and Drink, Autumn 2000. The Madeira brings out the sweetness of the parsnips and complements the mildly flavoured veal. This recipe is easily reduced to make a meal for 2 or 4 people. Serve with a green vegetable or salad. Veal chops are usually large enough to consider one portion per person. With other accompaniments, this course is sensible and does not allow for discomfort from overeating. I served this recipe as a main course, Christmas dinner, and it was a welcome change from the traditional turkey, ham, etc. The first two courses were lime sorbet and a sherried beef broth with sauteed scallion stems. Dessert was a mixture of berries and flavoured whipped cream followed by a tray of mixed cheeses. Selected wines could be a fine old Madeira; Valpolicella; or your favourite Chardonnay.

Tips:
- Choose high-quality veal chops for the best flavor and texture. Look for chops that are evenly marbled and have a light pink color.
- To make the Creole mustard crust, use a variety of mustards for a more complex flavor. Whole-grain mustard, Dijon mustard, and Creole mustard are all good choices.
- Be sure to coat the veal chops evenly with the mustard crust. This will help to ensure that the chops are flavorful and well-seasoned.
- Cook the veal chops over medium heat to prevent them from becoming dry. Use a meat thermometer to ensure that the chops are cooked to your desired doneness.
- Serve the veal chops with a variety of sides, such as mashed potatoes, roasted vegetables, or a salad.
Conclusion:
Veal chops with Creole mustard crust is a classic dish that is both flavorful and elegant. By following these tips, you can easily create this delicious dish at home.
