8 - 10 Ouces Cleaned, Thinly Sliced Mushroom Mix (See Notes Above)
4 Tablespoons Oil, Divided
2 Tablespoons Unsalted Butter
8 Thin Slices Veal Scallopini (About 1 1/2 Pounds), Pounded To Equal Thickness
All-Purpose Flour Seasoned With Salt And Pepper
1/2 Cup Sweet Marsala Wine
1 Cup Chicken Broth
1/2 Cup Heavy Cream
1/2 Teaspoon Fresh Thyme
Salt & Pepper

Steps:

  • Season the flour with salt and pepper.
  • Place the seasoned flour in a plastic bag and add the veal scallops.
  • Shake until they are well coated, then set aside.
  • In a large skillet, heat half the oil and butter until bubbly.
  • Add the mushrooms and cook until golden brown, about 15 minutes.
  • Remove mushrooms to a separate dish.
  • Add remaining oil to the skillet and once hot, fry the cutlets in the skillet one minute per side.
  • Remove cutlets to the dish with the mushrooms.
  • Add the Marsala wine, and deglaze, scraping up any browned bits from the bottom of the pan.
  • Add the chicken broth and cream, fresh thyme, then cook over high heat until the sauce has reduced by half and has thickened.
  • Taste and add salt and pepper as needed.
  • Return the mushroom and veal to the pan to reheat.
  • Serve the veal with a good sized spoonful of the mushroom marsala sauce.

¼ cup all-purpose flour
½ teaspoon seasoning salt
½ cup butter

Kosher salt, to taste

1 to 1 1/2 pounds veal cutlets (thin)
2 tablespoons olive oil
2 tablespoons butter
2 cups mushrooms (sliced)
1/2 cup low-sodium chicken broth
1/2 cup Marsala wine (sweet or dry)
1 tablespoon lemon juice

Steps:

  • Gather the ingredients. Preheat warming drawer or preheat oven to 200 F.
  • Season the veal cutlets with salt and pepper.
  • Put the flour in a shallow plate or bowl, then dredge the seasoned veal cutlets in the flour.
  • Heat the olive oil in a large skillet over medium-high heat.

8 veal cutlets (about 3 ounces each)
Salt and freshly ground black pepper
2 to 3 tablespoons unsalted butter
2 to 4 tablespoons olive oil
1 large shallot, finely chopped
2 to 4 garlic cloves, smashed
2 ounces assorted mushrooms, sliced
1/2 cup sweet Marsala
3/4 cup low-salt chicken broth
Leaves from 1 fresh rosemary sprig

Steps:

  • Sprinkle the veal with salt and pepper. Melt 1 tablespoon of butter and 1 tablespoon of oil in a heavy large skillet over medium-high heat. Add 4 veal cutlets and cook until golden brown, about 1 1/2 minutes per side. Transfer the veal to a plate. Add another tablespoon of butter and oil, if necessary. Repeat with the remaining 4 cutlets. Set the cutlets aside.
  • Add 1 tablespoon of oil to the skillet. Add the shallot and garlic. Saute until fragrant, about 30 seconds. Add a tablespoon of the olive oil, if necessary. Add the mushrooms and saute until tender and the juices evaporate, about 3 minutes. Season with salt. Add the Marsala. Simmer until the Marsala reduces by half, about 2 minutes. Add the broth and the rosemary leaves. Simmer until reduced by half, about 4 minutes. Return the veal to the skillet. Pour in all of the pan juices. Cook just until heated through, turning to coat, about 1 minute. Stir the remaining 1 tablespoon of butter into the sauce. Season the sauce with salt and pepper, to taste.
  • Using tongs, transfer the veal to plates. Spoon the sauce over the veal and serve.

1 lb veal scallops (About 1/8 Inch Thick.)

3 tbs unsalted butter
3 lbs boneless naturally raised veal stew meat, cut no smaller than 1" pieces
all purpose flour for dredging
2 large shallots, chopped finely
10 oz. (about 12 large) crimini mushrooms, quartered
15 dried shiitake, soaked in 2 cups boiling water, and sliced (reserve soaking liquid)
1 Portobello mushroom, sliced into 1" x 1/2" chunks
1 large red bell pepper, cut in half lengthwise, seeded, and sliced crosswise
2 tbs dried oregano, crumbled
3 large basil leaves, chopped
1 tsp ground allspice
3 large cloves garlic, minced
2-1/4 cups sweet Marsala wine (or combination of Sweet Marsala & Port)
1-1/2 cups chicken broth, made with the strained mushroom soaking liquid
Salt & pepper to taste

Steps:

  • Preheat oven to 350. Heat 1/2 of oil and butter in 5-quart Dutch oven over medium-high heat. Dredge veal in flour, shaking off excess. Add veal in batches to skillet, and brown, about 5 minutes, stirring occasionally. Do not overcrowd, or the veal will not sear properly. Transfer veal to plate using slotted spoon or tongs. Heat remaining oil and butter in same skillet. Add shallots, mushrooms, peppers, oregano, allspice, and basil and sauté about 5 minutes, until mushrooms are just beginning to brown. Stir in Marsala and garlic and reduce by 1/3. Add veal and any accumulated juices on the plate. Stir in chicken broth and bring to a boil. 12 large mushrooms, quartered
1 large red bell pepper, sliced
1 tablespoon dried oregano, crumbled

1/4 teaspoon dried crushed red pepper
3/4 cup dry Marsala wine
3 large garlic cloves, minced
1/2 cup low-salt chicken broth
Steamed white rice

Steps:

  • Preheat oven to 350°F. Heat 2 tablespoons oil in heavy large ovenproof skillet over medium-high heat. Dredge veal in flour, shaking off excess. Add veal to skillet and cook until brown, stirring occasionally, about 5 minutes. Transfer veal to plate using slotted spoon. Heat remaining 2 tablespoons oil in same skillet. Add mushrooms, bell pepper, oregano, allspice and crushed red pepper to skillet. Sauté until mushrooms are just beginning to brown, about 3 minutes. Stir in Marsala and garlic and boil until skillet is almost dry, about 4 minutes. Add veal and any juices accumulated on plate to skillet. Mix in chicken broth and bring to boil. 2 1/2 lbs stewing veal, cubed
1/3 cup flour
2 tablespoons vegetable oil
2 tablespoons butter
1 onion, chopped
3 leeks, chopped (white and light green parts only!)
2 garlic cloves, minced
1 bay leaf
3/4 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon ground nutmeg
2 1/2 cups chicken stock
4 cups mushrooms (small button or cremini)
2 cups shiitake mushroom caps
2 tablespoons lemon juice
1/2 cup whipping cream
1/4 cup fresh parsley, chopped

Steps:

  • Trim veal. In a large plastic bag, shake the veal with flour to coat.
  • In a large shallow Dutch oven, heat oil over med high heat, then brown veal in batches and transfer to slow cooker.
  • Drain fat from Dutch oven and add 1 tbsp of butter. Fry onions, leeks, garlic and lay leaf over med heat, stirring occasionally, until onion is softened (about 5 minutes).
  • Add 1/2 tsp each of the salt and pepper, all the thyme and nutmeg. Stir in stock and bring to a boil, scraping up any brown bits from the bottom of the pan.
