As someone who is lactose intolerant and loves Italian cream-based sauces, I have searched high and low for a decent, easy to make recipe for vegan/non-dairy alfredo sauce. I have experimented with as many of the ones I could find on the internet and have finally come close. I have used this on pasta tossed with sauteed veggies, and as a white sauce (bechamel sauce) in lasagna. It doesn't reheat well in the microwave, but will re-heat on the stove on low for 5 minutes. There are many variations out there but I am pretty happy with this one. You can add spices to change the flavor.

1 cup raw, unsalted cashews
1 ½ cups water
1 cup unsweetened almond milk
¼ cup water, or as needed
2 tablespoons minced fresh garlic
2 tablespoons nutritional yeast
1 tablespoon lemon juice, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper

Steps:

  • Soak cashews in 1 1/2 cups water until softened in a bowl, at least 20 minutes.
  • Drain water; add almond milk. Blend mixture in an electric blender or food processor until smooth, 30 seconds to 1 minute. Add water until sauce is slightly thinner than you want it for the final product, as it thickens when heated. Add garlic, nutritional yeast, lemon juice, salt, and pepper; blend until smooth.
  • Pour mixture into a saucepan. Heat on medium-low heat, stirring occasionally until heated through and desired thickness is achieved, about 5 minutes. You can add additional water or almond milk if sauce becomes too thick.

½ cup almond milk

Steps:

I got this recipe from "The Vegetarian Low-Carb Diet" book by Rose Elliott. Description from book: Cyndi's Vegan Alfredo Sauce, which I've adapted just slightly by using almonds instead of cashews, is wonderful: really creamy and delicious, and packed with protein. It's great with vegetable 'pasta' and I also like it with Roasted Vegetables and Roasted Cauliflower with Lemon. You can use it whenever you want to add some extra protein to a meal. If you can get daikon (a long, white radish), it makes lovely 'fettuccine' and is very low in carbs - but you can also use courgettes, turnips or kohlrabi, for varying, slightly higher carb counts.

18 ounces daikon radishes
olive oil
9 ounces firm tofu, drained and broken into rough pieces
1 garlic clove, peeled and crushed
2 ounces sliced almonds
4 sprigs basil
2 tablespoons lemon juice
3 1/2-5 fluid ounces water

Steps:

  • Start with the sauce. Put the tofu and garlic into a food processor and whiz until smooth. Then add the almonds and basil and whiz again until as smooth as possible.
  • Add the lemon juice and enough of the water - or more - to got a creamy consistency. Season to taste with salt and pepper, transfer to a saucepan and set aside.
  • Bring half a saucepan of water to the boil. Meanwhile, cut the daikon into long, thin ribbons by running a swivel potato down the length.
  • Put the ribbons into the boiling water, bring back to the boil and cook for about 4 minutes, or until al dente. Drain immediately and return to the pan.
  • While the daikon is cooking, gently reheat the sauce.
  • To serve, either add the sauce to the daikon and mix well, or toss, the daikon in a little olive oil, serve out onto plates and pour the creamy sauce over the top.

Apart from a bit of fresh lemon juice and garlic, these items are pantry staples for most vegetarians or vegans. You want to be careful not to overcook the sauce. I found the flavours were better raw, much more mellow when I had cooked it with some leftover pasta. So I'd recommend really gently heating the sauce. If you're looking for a really traditional "cheesy" sort of flavour, keep in mind this won't be exactly it, but it is savory and cheese like....I guess as cheesy as you get vegan wise. 1/2 cup raw cashews, unsalted
1/4 cup nutritional yeast
