VEGETARIAN CHILI WITH BUTTERNUT SQUASH AND MOROCCAN SPICES

Vegetarian Chili With Butternut Squash and Moroccan Spices image

This Moroccan-inspired take on vegetable chili is not so much spicy as it is spiced, using ingredients you're likely to have stocked in your pantry. In place of the same old kidney beans, this recipe uses butternut squash, cauliflower and chickpeas, making it a lighter, fresher update on the classic dish. Like any good pot of chili, this is even better reheated the next day.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 17

3 tablespoons olive oil
1 large yellow onion, chopped (about 2 cups)
1 1/2 teaspoons ground chili powder
1 1/2 teaspoons ground sweet or hot paprika
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 tablespoon minced garlic (about 3 cloves)
1 (2- to 2 1/2-pound) butternut squash, peeled, seeded and cut into 1/2-inch cubes
2 (15-ounce) cans chickpeas, drained and rinsed
4 cups low-sodium vegetable broth
1 (28-ounce) can crushed tomatoes
1 tablespoon tomato paste
2 teaspoons brown sugar
2 teaspoons kosher salt, plus more to taste
1/2 medium head cauliflower, trimmed and cored
Plain yogurt or sour cream, for serving (optional)
Thinly sliced scallions, for serving (optional)

Steps:

  • In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium. Add the onions, chili powder, paprika, cumin and cinnamon, and cook until tender, stirring often and lowering the heat as necessary to keep the spices from burning, 6 to 8 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. (Be careful not to let the garlic burn.)
  • Add the squash, chickpeas, broth, tomatoes, tomato paste, brown sugar and 2 teaspoons salt, and bring to a boil over medium-high heat. Reduce the heat to low and simmer, partially covered, for 20 minutes. Meanwhile, cut the cauliflower into bite-size florets, trimming and discarding any long stems.
  • Add the cauliflower to the pot and simmer uncovered, stirring occasionally, until the chili is thick and the vegetables are very tender, 20 to 25 minutes.
  • Season to taste with salt, and serve hot, with yogurt and scallions, if desired.

HEARTY VEGETARIAN TOFU CHILI

Hearty Vegetarian Tofu Chili image

This is a delicious colourful chili with a perfect blend of many vegetables with tofu in a thick spicy tomato base. This original recipe came from Runner's World magazine, although I have altered it to suit my likings. Frying tofu gives it a more meat like texture. For those who like chili very spicy, more chili powder may be added.

Time 1h15m

Yield 5 serving(s)

Number Of Ingredients 15

1 medium onion, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
1 teaspoon olive oil
16 ounces extra firm tofu, drained and crumbled
1 teaspoon cumin
1 teaspoon hot sauce
salt, to taste
pepper, to taste
1 (19 ounce) can red kidney beans, drained
1 (19 ounce) can white kidney beans, drained
1 (28 ounce) can diced tomatoes
1 (14 ounce) can tomato sauce
3 medium carrots, sliced
2 tablespoons chili powder

Steps:

  • Saute first 4 in meduium heat.
  • Add tofu, cumin, hot sauce, and salt and pepper and saute until crisp and lightly browned (10 min).
  • Add rest of ingredients (beans, tomatoes, tomato sauce, carrots, and chili powder).
  • Boil, reduce heat and simmer 45 to 55 minutes.

Tips:

  • Use ripe butternut squash: A ripe butternut squash will be deep orange in color and have a firm, dense feel. Avoid squash that is bruised or has soft spots.
  • Roast the butternut squash before adding it to the chili: Roasting the squash will help to bring out its natural sweetness and flavor. To roast the squash, preheat your oven to 400 degrees Fahrenheit. Cut the squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet and drizzle with olive oil. Roast for 30-40 minutes, or until the squash is tender.
  • Use a variety of beans in your chili: This will add different flavors and textures to the dish. Some good beans to use include black beans, kidney beans, and pinto beans.
  • Don't be afraid to add some heat to your chili: Chili is a great dish to experiment with different spices. If you like spicy food, add some chili powder, cayenne pepper, or jalapeños to the pot.
  • Let the chili simmer for at least 30 minutes: This will allow the flavors to develop and meld together. The longer you simmer the chili, the better it will taste.

Conclusion:

This vegan butternut squash and tofu chili is a hearty, flavorful, and satisfying dish that is perfect for a cold winter day. It is packed with vegetables, beans, and tofu, and it is simmered in a rich and flavorful broth. This chili is also relatively easy to make, and it can be tailored to your own taste preferences. So next time you are looking for a delicious and healthy vegan meal, give this butternut squash and tofu chili a try.
