1/2 cup onion, diced
2 garlic cloves, crushed
1 leek, white and soft green parts, sliced thinly
1 potato, peeled and cubed
2 1/2 cups vegetable stock
1 cup water
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried basil
1 (10 ounce) package frozen spinach
2 tablespoons Earth Balance margarine
2 tablespoons tofutti sour cream
1 cup almond milk
2 baby carrots, shredded for garnish (optional)
1 tablespoon tofutti sour cream, for garnish (optional)

Steps:

2 medium onions, chopped
3 medium leeks (white portion only), chopped
1 medium green pepper, chopped
6 garlic cloves, minced
2 tablespoons olive oil
4 medium potatoes, peeled and cubed
2 cans (14-1/2 ounces each) vegetable broth
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 cup coconut milk, optional
2 green onions, chopped

Steps:

  • In a nonstick Dutch oven, saute the celery, onions, leeks, green pepper and garlic in oil until tender. Add the potatoes, broth, pepper and salt. Bring to a boil. 2 leeks, white and light green parts chopped
3 cloves of garlic, chopped
1 fennel bulb, white parts chopped and fronds chopped and reserved
3 yukon gold potatoes, peeled and chopped
8 cups vegetable stock
1 cup pine nuts
juice from one lemon

  • Heat olive oil in a large soup pot. Add the onion and saute until until translucent. Add garlic and fennel and saute until fennel is slightly soft. Add potato and saute about two minutes.
