Dressing
1 cup raw cashews soaked (1 cup is before soaking)
1/2 cup plant-based milk (I used cashew milk)
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
3/4 teaspoon sea salt finely ground
1/4 teaspoon mustard (not powder)
1/4 teaspoon garlic powder (optional-add to enhance savory aspect)
Salad
2 cups chopped crisp sweet red apple (about 1/2 inch pieces, I used Gala)
1 cup red grapes (halved)
1/2 cup golden raisins
1/2 cup chopped pecans (walnuts can be substituted)
2 tablespoons lemon juice
1/4 cup diced celery (1/8 to 1/4 inch pieces)
Boston or green leaf lettuce for serving

Steps:

  • Dressing
  • 1) Soak cashews in 1 1/4 cups very hot water for about 20 minutes. Cashews should be soft and tender. Rinse and drain.
  • 2) Add soaked cashews and remaining dressing ingredients to blender or food processor. Pulse a few times to break down nuts then blend on high speed, stopping periodically to scrape sides. If you are using the extra large blending container you will have to scrape frequently for the first minute.
  • Salad
  • 1) Core and chop apple. Add to medium mixing bowl. Bathe apple in 2 tablespoons lemon juice. This must be done immediately to prevent apple from browning.
  • 2) Chop grapes, celery, and nuts and add along with raisins to bowl containing apple. Stir to blend ingredients.
  • 3) Dollop salad mixture with 1/2 cup of dressing and stir gently until evenly mixed. If a more heavily dressed salad is desired add more dressing at this point. Optionally reserve some dressing to add to salad after chilling.
  • 4) Salad may be eaten immediately but is best when chilled (about an hour). After chilling add more dressing and serve on a bed of greens such as Boston or green leaf lettuce. Store in refrigerator for 2 or 3 days.

12 oz greens of choice (we used butter lettuce and green leaf lettuce)
2 cups apples, diced
1.5 cups grapes, sliced
1.5 cups celery, chopped, optional
1 cup walnuts, chopped
1 can chickpeas, drained
8 oz firm tofu (about 198g), drained not rinsed (see note 1)
1/3 cup unsweetened non-dairy milk (any will work)
Juice of 1 medium lemon
1-2 tbsp maple syrup (to taste, or use sweetener of choice)
1/2 - 3/4 tsp salt, optional

Steps:

  • The first thing to do to make this simple, satisfying salad (I like alliteration, OK?) is to cut up all your apples, celery, and grapes. I just slice my grapes in half. Give a rough chop to your walnuts too if they're not already in pieces when you buy them. TIP: walnut pieces are cheaper than whole walnuts because it's harder to extract the nut from the shell without breaking it, so they usually put a higher price on whole nuts. The same is true with other nuts, especially cashews which are very expensive.
  • For the lettuce, wash and dry the leaves. I like to use a salad spinner for this. If you're going to mix your greens into the salad, cut them or tear them into bite sized pieces. If not, line them around a bowl like I did.
  • Make the dressing: add all dressing ingredients to your blender and blend until smooth. If you're going to just mix your greens in, add everything to one bowl and mix it all up and serve! You're done!
  • If you're going that extra step to make it look pretty, mix the chopped ingredients and the dressing well in a separate bowl, then add that mixture carefully to your leaf lined bowl.
  • Refrigerate the salad for up to 3 days in the fridge. The lettuce may wilt a bit. If you are making this in advance for an event, I'd make it no more than 12 hours in advance for best results.

1 tablespoon agave syrup

sea salt and freshly ground black pepper, to taste
8 oz or 220 g red seedless grapes (about 1 1/2 cups)
3-4 crisp apples
3/4 cup or 95 g walnuts (toasted)
3 tablespoons parsley (chopped)
5-8 leaves fresh lettuce

Steps:

  • Start by making the dressing. Place soaked cashews, apple cider vinegar, mustard, agave syrup, nutritional yeast into a high speed blender and pulse until smooth gradually adding water until the dressing looks as thick as mayonnaise. Try and season with salt and black pepper to taste.

4 stalks celery with leaves ((small stalks approximately 300 grams, 10.6 ounces or 2½ cups diced) )
1 medium red apple ((approximately 160 grams or 6.42 ounces))
1 medium green apple ((approximately 160 grams or 6.42 ounces))
1 cup black grapes, sliced ((approximately 160 grams or 6.42 ounces))
¾ cup walnut halves, roasted
¾ cup cranberries, dried
Sea salt and cracked black pepper
¾ cup chopped walnuts
½ cup olive oil
½ cup apple cider vinegar
1 tablespoon maple syrup

Steps:

  • Wash, trim and remove the cores from your apples then slice thinly into half-moons using a v-slicer or sharp knife.
  • To prevent your apples from browning place them in salted water using one teaspoon of salt for every two cups of water.
  • Wash your celery stalks, trim the white ends and the top of leaves. Use a vegetable peeler, to de-thread if you have time.
  • Then finely chop the celery into small dice or thinly slice it in a food processor.
  • Wash your grapes then cut in half.
  • Chop your toasted walnuts (it is important to chop them so your dressing is smooth and not lumpy). Place the walnuts in a blender with the oil and blitz until it comes together.
  • Add the apple cider vinegar, maple syrup and season. Blitz until creamy, taste and adjust seasoning. Add some water to loosen it if it is still a bit thick.
  • Strain your apples well and pat dry,
  • Add everything to a large mixing bowl, pour over the dressing and season.
  • Mix well until everything is well coated with the dressing. Arrange in a salad bowl and keep chilled until ready to serve.

1/2 cup Aquafaba
2 tsp. Lemon juice
1 tsp. Maple syrup (or cane sugar)
1 tsp. Apple cider vinegar
1/2 tsp. Mustard powder
1/2 tsp. Salt
1 1/2 cups Avocado oil
1/2 medium Head of red lettuce
3 Apples (I used Fuji, but feel free to use your favorites), cored and chopped into 1/2" pieces
2 cups Celery, chopped
2 cups Grapes, cut in half
1 1/4 cups Walnuts, chopped
3/4 cup Mayonnaise (from recipe above or store bought)
1/2 Lemon, juiced
1/2 tsp. Maple syrup
1/2 tsp. Salt
1/4 tsp. Black pepper

Steps:

  • Using an immersion blender, blend the aquafaba for about 3 minutes in a tall bowl, until it becomes frothy, about 3 minutes
  • Add the rest of the ingredients, except the oil, and blend again for 2-3 more minutes
  • While you are blending, stream in the oil slowly, until it is emusified and white.
  • Refrigerate until needed.
  • In a small bowl, mix all of the ingredients together with a small whisk or a fork until well. mixed.
  • Line a large wide bowl with the lettuce leaves.
  • In another bowl, mix the apples, celery, grapes and walnuts with the dressing.
  • Mound the apple mixture in the center of the lettuce and either chill, or serve right away,

Tips:

  • Use fresh, ripe apples for the best flavor and texture.
  • If you don't have celery, you can substitute jicama or fennel.
  • To make the salad ahead of time, prepare all of the ingredients and store them separately in the refrigerator. When you're ready to serve, combine the ingredients and toss to coat.
