2 (1 lb) bags california-blend frozen vegetables, thawed, the broccoli cauliflower and carrot blend
1/2 cup chopped onion
1/4 cup butter, melted
3/4 cup reduced-fat sour cream
1/2 cup mayonnaise
1 1/2-2 cups shredded sharp cheddar cheese
1/2 cup crushed buttery cracker, Ritz
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 350°F
  • Grease a 1 1/2 - 2 quart casserole; set aside.
  • Drain off all water from thawed veggies.
  • Place drained, thawed veggies in a large bowl. Add ALL remaining ingredients.
  • Mix everything well.

½ cup cherry tomatoes, cut in half
4 medium (4-1/8" long)s green onions, sliced
2 (8 ounce) cans refrigerated crescent dinner rolls

  • Heat oven to 375 degrees F.
  • Mix first 3 ingredients in large bowl until well blended. Stir in next 4 ingredients.
  • Unroll dough; separate into 16 triangles. Arrange in 11-inch circle on foil-covered baking sheet, with short sides of triangles overlapping in center and points of triangles toward outside. (There should be a 5-inch diameter opening in center of circle.) Spoon cheese mixture onto dough near center of circle. Bring outside points of triangles up over filling, then tuck under dough in center of ring to cover filling.
  • Bake 35 to 40 min. or until crust is golden brown and filling is heated through.

225ml bag baby leaf spinach
6 large eggs
425ml milk
1 tbsp English mustard powder
200g bread (about 3 thick slices)
200g mature vegetarian cheddar
4 clusters of cherry tomatoes on the vine

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
  • Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
