Categories     Soup

Number Of Ingredients 15

1 medium butternut squash
2 large gold potatoes
1 medium yellow onion
2 tbsp butter
3 garlic cloves
3 cups vegetable stock (just enough to cover the veggies)
salt
fresh cracked pepper
1/2 tsp paprika
1 small bay leaf
1/4 cup heavy cream
1/2 cup mild cheddar cheese
sour cream
diced chives
croutons

Steps:

  • Heat and melt the butter in a medium pot, on medium heat.
  • Peel squash and take out the seeds and membrane. Chop it into small cubes.
  • Peel and chop potatoes and onion. Cut potatoes and butternut squash into cubes that are the same size.
  • Add onion to the pot and saute until transparent.
  • Add potatoes, pressed (or minced) garlic, and butternut squash.
  • Add paprika, salt, and pepper and saute for 5-10 minutes, stirring occasionally.
  • Add just enough stock to cover the veggies. Cook until veggies are fully cooked and tender, about 20 minutes. (Time may vary depending on how small you cut potatoes and squash.)
  • Take out the bat leaf and discard.
  • Slowly transfer content of the pot into a food processor, make sure to crack the lid to let the steam out. Blend well and return to the pot.
  • Add the heavy cream and cheese. Stir until all blended. Be careful here, the soup will bubble and splash when it starts to heat up. Keep stirring. When cheese is melted, soup is all done.
  • Serve with a dollop of soup cream, chives, and croutons.

VEGETARIAN BUTTERNUT SQUASH CURRY SOUP

Vegetarian Butternut Squash Curry Soup image

This vegetarian Thai red curry soup gets its creaminess from coconut milk and can be made completely plant-based (vegan) by omitting the heavy cream. The spiciness will vary with the heat of your curry paste. An immersion blender works best for making this soup.

Provided by Jeannette

Time 1h50m

Yield 6

Number Of Ingredients 13

1 tablespoon coconut oil
1 cup chopped onions
1 tablespoon tomato paste
1 teaspoon red curry paste, or more to taste
3 cloves garlic, minced
3 pounds butternut squash cubes
1 small tart apple - peeled, cored and chopped
2 cups water, or as needed to cover
1 (14 ounce) can coconut milk
1 tablespoon grated fresh ginger
1 teaspoon white sugar
½ teaspoon salt, or more to taste
½ cup heavy cream

Steps:

  • Heat coconut oil in a large pot over medium heat; stir in onions. Cook and stir until onions are soft and starting to brown, about 5 minutes. Reduce heat to low and continue cooking and stirring until onions are very tender and caramelized, at least 30 minutes more.
  • Add tomato paste and 1 teaspoon curry paste; cook, stirring constantly, for 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Add butternut squash and apple; cook, stirring constantly, until evenly coated with spices, 1 to 2 minutes.
  • Pour just enough water into the pot to almost cover squash and apple. Stir, increase heat to high, and bring to a boil. Reduce heat to medium, cover, and simmer, stirring occasionally, until squash is very tender, 30 to 45 minutes.
  • Reduce heat to low and stir in coconut milk and ginger. Puree soup with an immersion blender until smooth. Add sugar and salt, and more curry paste if needed. If soup isn't smooth enough, cook an additional 20 to 30 minutes and puree again.
  • Stir in heavy cream. Add more water if soup is too thick. Taste and adjust seasonings. Serve hot.

Tips:

  • Choose the right squash: For this soup, butternut squash is the best choice. It has a sweet and nutty flavor that pairs well with the other ingredients.
  • Roast the squash before adding it to the soup: Roasting the squash brings out its natural sweetness and flavor. It also helps to caramelize the squash, which gives the soup a richer flavor.
  • Use a good quality vegetable broth: The vegetable broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich flavor.
  • Don't overcook the soup: The soup is best when it is just heated through. Overcooking the soup will make the vegetables mushy and the soup will lose its flavor.
  • Season the soup to taste: The soup should be seasoned with salt and pepper to taste. You can also add other spices, such as cumin, coriander, or paprika, to taste.
  • Serve the soup with your favorite toppings: The soup can be served with a variety of toppings, such as croutons, crumbled bacon, or grated cheese.

Conclusion:

This vegetarian squash and potato soup is a delicious and hearty soup that is perfect for a fall or winter meal. It is easy to make and can be tailored to your own taste. With its creamy texture and rich flavor, this soup is sure to be a hit with everyone who tries it.
