SAUCE:
2 cups finely chopped baby portobello mushrooms
1 large onion, finely chopped
2 garlic cloves, minced

3/4 teaspoon salt
3/4 teaspoon pepper
FILLING:
1-1/4 cups ricotta cheese
1 package (8 ounces) cream cheese, softened
3/4 cup grated Parmesan cheese
1 egg, lightly beaten
2 teaspoons dried basil
ASSEMBLY:
12 no-cook lasagna noodles
3 cups shredded Italian cheese blend

Steps:

  • Preheat oven to 425°. Place first nine ingredients in a large bowl; toss to coat. Arrange on two greased 15x10x1-in baking pans. Bake 10-15 minutes or until tender, stirring occasionally. Reduce oven to 350°., Meanwhile, in a Dutch oven, saute mushrooms, onion and garlic in oil until tender. Stir in remaining sauce ingredients; bring to a boil. 8 ounces zucchini (about 1 medium), sliced into 1/2-inch rounds
8 ounces yellow squash (about 1 medium), sliced into 1/2-inch rounds
1 cup sliced baby bella mushrooms
1 cup spinach
Salt and freshly ground black pepper
Cooking spray, for spraying the baking dish
9 lasagna noodles (7 inches by 3 inches), cooked according to the package instructions
One 15-ounce container whole-milk ricotta cheese
Cherry Tomato Sauce, recipe follows
1 cup fresh basil leaves
1 cup shredded mozzarella
2 pounds cherry tomatoes
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh parsley
1 tablespoon olive oil
10 garlic cloves, unpeeled
1 white onion, roughly chopped
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan on medium heat. Add the zucchini and yellow squash and cook until slightly tender, about 4 minutes. Add the mushrooms and cook for about 3 minutes. Add the spinach and turn off the heat. Toss to combine, letting the spinach wilt. Season with salt and pepper.
  • Spray a 9-by-13-by-2-inch baking dish with cooking spray. Place 3 lasagna noodles on the bottom of the baking dish, forming 1 layer (the noodles may overlap). Layer one-third of the veggie mixture, one-third of the ricotta cheese and one-third of the Cherry Tomato Sauce in the dish, spreading each layer evenly. Top with 1/2 cup of the basil. Repeat a second time with the noodles, veggie mixture, ricotta and tomato sauce; top with the remaining 1/2 cup basil. Repeat a third time, but finish the top layer with the mozzarella.
  • Cover with aluminum foil and bake for 35 minutes. Remove the aluminum foil, turn the oven to broil and broil on high until the cheese is crisp and golden, about 5 minutes.
  • Preheat the oven to 350 degrees F.
  • Combine the tomatoes, oregano, thyme, parsley, olive oil, garlic and onions on a large baking sheet. Season with salt and pepper and toss, making sure everything is evenly coated. Bake until the tomatoes are golden and the onions are caramelized, about 20 minutes.
  • Carefully peel the garlic, making sure not to burn your fingers. Transfer the ingredients to a blender and process until smooth. Check for seasoning and add more salt and pepper if desired. Reserve for later use.

2 tablespoons olive oil
1/2 yellow onion, finely chopped
2 cloves garlic, finely chopped
1 yellow squash, diced
1 zucchini, diced
Kosher salt and freshly ground pepper
Pinch of red pepper flakes
1 (28-ounce) can crushed tomatoes
1 (15-ounce) can tomato sauce
Pinch of sugar, optional
1 (15-ounce) container part-skim ricotta cheese
1 (16-ounce) bag frozen chopped spinach, thawed and squeezed dry
7 ounces store-bought pesto
1 box no-boil lasagna noodles
2 cups shredded part-skim mozzarella cheese
1/4 cup grated Parmesan
Fresh basil, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring, until softened, about 4 minutes. Add the yellow squash and zucchini and cook, stirring, for 4 to 5 minutes more. Season with salt, pepper and red pepper flakes. Stir in the crushed tomatoes and tomato sauce; bring to a simmer. Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and transfer to paper towels; blot dry.
  • Heat oil in a large skillet over medium heat. Add mushrooms, onion, garlic, and Italian seasoning. 2 cups canned crushed tomatoes

1/4 teaspoon Italian seasoning
1 (16-ounce) package frozen chopped spinach, thawed, thoroughly drained and patted dry
2 tablespoons fat-free liquid egg substitute
1 cup fat-free ricotta cheese

Dash ground nutmeg
1 cup ground-beef-style soy crumbles, thawed from frozen

Steps:

  • Preheat oven to 425 degrees F.
  • Lay several paper towels next to the stove; as you cook the veggies, transfer them to the paper towels to drain excess moisture.
  • Bring a very large grill pan sprayed with nonstick spray to medium-high heat on the stove. Add zucchini, portabella mushroom, and eggplant, and cook until softened, about 2 minutes per side. Set aside.
  • In a large bowl, combine crushed tomatoes with garlic powder, onion powder, and Italian seasoning. Mix well and set aside.

Nonstick cooking spray, for spraying baking sheet
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, diced
1 red bell pepper, diced
24 ounces white mushrooms, chopped
2 yellow squash, diced
2 zucchini, diced
1/2 cup white wine
1/2 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper
One 28-ounce can diced tomatoes, drained
1/4 cup tomato paste
1/4 cup chopped fresh parsley
32 ounces ricotta
1/2 cup grated Parmesan
2 large eggs
Salt and freshly ground black pepper
1 1/2 pounds shredded fresh mozzarella
Grated Parmesan, for sprinkling

Steps:

  • For the noodles: Cook the noodles according to the package instructions. Spray a baking sheet with cooking spray. Drain the noodles and transfer them to the prepared sheet.
  • For the sauce: Heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook for a minute. Add the red peppers and saute for another minute or so. Add the mushrooms, yellow squash and zucchini and cook for a few minutes. Pour in the wine, add the red pepper flakes and some salt and pepper and stir. Pour in the tomatoes, using your hands to squeeze and crush the tomatoes, and add the tomato paste. Stir to combine, bring to a simmer and let simmer for 20 minutes or so. Stir in the parsley.
  • For the ricotta mix: In a bowl, combine the ricotta, Parmesan, eggs, 1/4 teaspoon salt and some pepper.
  • To assemble: Grab a foil loaf pan and spoon in 1/4 to 1/2 cup of the sauce on the bottom of the pan. Lay out 3 noodles and spoon 1/4 cup of the ricotta mix on each and spread evenly. Roll each noodle tightly and place the rolled noodles in the loaf pan on top of the sauce. Top with more sauce and sprinkle with shredded mozzarella and Parmesan. Repeat with the remaining ingredients. Cook immediately, or cover with foil and freeze.
  • To cook immediately, bake, uncovered, at 350 degrees F until bubbly, about 25 minutes. To cook frozen, remove the loaf pans from the freezer and bake, covered, at 350 degrees F for 40 minutes. Uncover and bake until the cheese is nice and bubbly, an additional 10 minutes.

This veggie lasaga is packed with veggies. I started with a tofu mixture from How It All Vegan, and then went from there. (I expect that the nutrition info is off on the cholesterol. Regular lasagne noodles are vegan, and would have no cholesterol..the Zaar nutritional content is showing cholesterol. However, if you use the no-bake lasagne noodles, those are not vegan, so if that is important to you, then keep that in mind.)

8 ounces lasagna noodles, cooked and drained
1/2 cup tomato sauce
14 ounces extra firm tofu
1/4 cup soymilk
1 teaspoon dried oregano
2 teaspoons dried basil
1 teaspoon salt
2 tablespoons lemon juice
2 garlic cloves, minced
1 small onion, minced
2 cups spinach, chopped
1/4 cup olive oil
1 medium sweet red pepper, julienned
8 ounces fresh mushrooms, sliced
2 small zucchini, cut into 1/4 inch slices
2 medium carrots, sliced very thin (or shredded)
1 1/2 cups of your favorite tomato sauce
1/2 cup water

Steps:

  • Preheat over to 350 degrees.
  • In a blender or food processor, combine the tofu, soy milk, oregano, basil, salt, lemon juice, garlic, and onion. Blend until the mixture has the consistency of ricotta cheese.
  • Stir in the chopped spinach and set aside.
  • In a large saucepan, saute the red pepper, mushrooms, zucchini, carrots in the oil until crisp-tender. (Feel free to add any other veggies that you like. I just use the ones listed as a starting point.).
  • Stir in the tomato sauce and water.
  • Bring to boil, then cover, reduce heat and simmer for 30 minutes, stirring occasionally. (If you find that the veggie mix is too thin, uncover for last 5 minutes.).
  • Cover bottom of lasagna pan with 1/2 cup tomato sauce.
  • Layer with lasagne noodles, trimming to fit, if needed.
  • Cover with a layer of 1/2 the tofu mixture, then layer of noodles, then layer of 1/2 the veggie mixture, then layer of noodles, then remaining tofu mixture, another layer of noodles, and then top with the remaining veggie mixture.

1 medium eggplant, peeled and cut into 1/4-inch slices
3 garlic cloves, minced
6 tablespoons olive oil

  • Cook carrots according to package directions; drain and cool. In a small skillet, saute onion in butter until tender. In a food processor, puree the carrots, onion, ricotta, salt and pepper. In same skillet, saute shallots in oil until tender. In a food processor, puree the shallots, spinach, ricotta, egg, salt and pepper. , In a large skillet, cook eggplant and garlic in oil over medium heat in batches for 7-10 minutes or until tender; drain. 1 and 1/2 cups trimmed broccoli crowns, broken down into bite size pieces
2 zucchini, cut into 1/4-inch thick half circles
1 large red bell pepper, de-seeded and cut into 1-inch squares
2 Tbs. Extra virgin olive oil
Salt and pepper to taste
1-2 Tbsp. Italian herb seasoning mix (optional)
2-3 Tbs. Pesto to taste
1 cup Alfredo cream sauce
6-8 full size lasagna noodles, either cooked or no-boil style
16oz. Ricotta cheese
1 cup shredded parmesan cheese, separated into 3/4 cup and 1/4 cup
2 oz. Fresh or frozen spinach or fresh basil leaves
16 oz. Mozzarella cheese, shredded
1/2 tsp. Dried oregano

Steps:

  • 1. Place carrots, broccoli, zucchini, and red peppers in one layer on to a large lined baking sheet. Coat with olive oil, salt and pepper (and if desired, additional Italian herbs) to taste. Place in a 400 degree oven and roast for 30-40 minutes or until golden brown. This can be done a day or two ahead of time, if desired. 2. If needed, prepare the lasagna noodles by boiling them. If using no-boil noodles, skip this step. 3. Mix roasted veggies with pesto and cream alfredo sauce until completely covered. 4. Place a single layer of lasagna noodles to cover the bottom of a 13x9x2 inch baking dish. 5. Spoon veggie mixture over noodles, distributing evenly. 6. Place another single layer of lasagna noodles over veggie layer. 7. Mix ricotta cheese with 3/4 cup of shredded parmesan cheese and fresh or frozen spinach or basil leaves. Spread evenly over noodle layer. 8. Spread shredded mozzarella cheese evenly over ricotta layer. Sprinkle final quarter cup of parmesan cheese over the mozzarella and finish by sprinkling dried oregano over the top of everything. 9. Bake in a 350 degree oven for 35-40 minutes. 18 uncooked lasagna noodles
2 large eggs
2 large egg whites
2 cartons (15 ounces each) reduced-fat ricotta cheese
4 teaspoons dried parsley flakes
2 teaspoons dried basil
2 teaspoons dried oregano
1 teaspoon pepper
8 cups garden-style spaghetti sauce
4 cups shredded part-skim mozzarella cheese
2 packages (16 ounces each) frozen cut green beans or 8 cups cut fresh green beans
2/3 cup grated Parmesan cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a small bowl, whisk the eggs, egg whites, ricotta cheese, parsley, basil, oregano and pepper; set aside. , In each of two 13x9-in. baking dishes coated with cooking spray, spread 1 cup spaghetti sauce. Drain noodles; place 3 noodles over spaghetti sauce in each dish. , Layer each with a quarter of the ricotta mixture, 1 cup spaghetti sauce, 1 cup mozzarella cheese, 3 lasagna noodles and half of green beans. Top each with remaining ricotta mixture and 1 cup spaghetti sauce. Layer with remaining lasagna noodles, spaghetti sauce and mozzarella cheese. Sprinkle Parmesan cheese over each. , Cover and freeze 1 casserole for up to 3 months. Bake remaining lasagna, uncovered, at 375° for 40-45 minutes or until bubbly and edges are lightly browned. Let stand for 10 minutes before serving., To use frozen lasagna: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 375° for 1-1/4 to 1-1/2 hours or until bubbly. Let stand for 10 minutes before serving.

1 (28 ounce) jar fat free spaghetti sauce or 1 (28 ounce) jar reduced-fat spaghetti sauce
6 uncooked lasagna noodles
1 -2 cup sliced or chopped vegetables, of your choice (I like zucchini and yellow squash)
1 (12 1/3 ounce) container extra-firm silken tofu, broken up (I use Mori Nu Lite)
1 (8 ounce) package soy mozzarella cheese, shredded (I use Veggie Shreds)
4 tablespoons vegan parmesan cheese
salt and pepper, to taste

Steps:

  • Preheat oven to 375°F.
  • Spray 11x7-inch baking dish with nonstick spray.
  • Spread 1/3 of sauce on bottom of dish; arrange 3 lasagna noodles in single layer over sauce.
  • Top with another 1/3 of sauce, all veggies, all the tofu, half the mozzarella, then remaining noodles in single layer.
  • Spread evenly with remaining sauce, cover dish with foil, and bake until noodles are tender and mixture is piping hot, about 1 hour.
  • Sprinkle with remaining mozzarella and soy parmesan; bake uncovered 5 minutes longer or until cheese melts.
  • Let stand 5 minutes before serving.

2 medium carrots, julienned
1 medium zucchini, cut into 1/4-inch slices
1 yellow summer squash, cut into 1/4-inch slices
1 medium onion, sliced
1 cup fresh broccoli florets
1/2 cup sliced celery
1/2 cup julienned sweet red pepper
1/2 cup julienned green pepper
1/2 to 1 teaspoon salt
2 tablespoons canola oil
2 garlic cloves, minced
3-1/2 cups spaghetti sauce
14 lasagna noodles, cooked and drained
4 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, stir-fry vegetables and salt in oil until crisp-tender. Add garlic; cook 1 minute longer., Spread 3/4 cup spaghetti sauce in the greased 13x9-in. baking dish. Arrange seven noodles over sauce, overlapping as needed. Layer with half of the vegetables, spaghetti sauce and cheese. Repeat layers. , Cover and bake at 350° for 60-65 minutes or until bubbly. Let stand for 15 minutes before cutting.

Veggie-filled sauce layered perfectly with lasagna noodles, ricotta, and gooey mozzarella cheese. It's perfect vegetarian comfort food, made easily in a single skillet.

2 tablespoons olive oil
1 cup diced onion (about 1/2 medium onion)
2 medium cloves garlic (diced)
1 cup sliced button mushrooms
1 cup diced zucchini (about 1 small)
1 cup baby spinach leaves
3 cups Italian tomato sauce or other tomato-based pasta sauce of your choice
Salt and pepper to taste
8 ounces lasagna noodles (about 1/2 pound, broken into 3 - 4 inch pieces)
3 cups shredded mozzarella cheese (about 12 ounces)
15 ounces part-skim ricotta cheese (whole milk ricotta works fine too)
1/4 cup shredded Parmesan cheese
12- inch or larger cast-iron skillet (or other oven-proof skillet)

Steps:

  • Heat oven to 375 degrees. Place a 12-inch or larger cast-iron skillet on the stovetop over medium heat. Heat olive oil and add onions, stirring frequently, until they begin to soften. Add the garlic, sauteeing for another minute. Add the zucchini and mushrooms and saute for 3 - 4 minutes until the zucchini is tender and the mushrooms soften.
  • Pour Italian tomato sauce over veggies and combine, stirring over medium heat until warmed through. Stir in baby spinach leaves and cook for an additional minute. Taste sauce and add a little salt and pepper if desired.
  • Remove pan from heat.
  • Remove all but 1 cup of the sauce from the pan. Spread the remaining sauce evenly in the bottom of the pan and cover with a layer of noodles. No need to place them perfectly evenly, just place them here and there in a single layer until most of the sauce is covered by the pasta.
  • Spoon the ricotta, about 5 or 6 mounds and about 1/3 of ricotta, onto the noodles. Add 1/3 of the remaining sauce, spreading evenly with the back of a spoon, and then sprinkle 1/3 of the mozzarella. Add another layer of noodles. Repeat with another layer - ricotta, sauce, mozzarella, and noodles, then spoon the remaining sauce on the top, add the ricotta, sprinkle with the remaining mozzarella cheese, and top with the Parmesan cheese.
  • Place the skillet in the oven and bake for about 30 minutes, until the cheese is bubbly and the pasta is cooked through.
  • Remove from oven and allow to cool for about 5 minutes, then serve.

1 1/2 tablespoons olive oil
1 (10 ounce) package frozen artichoke hearts, thawed and sliced
2 (14 ounce) cans black olives, halved
1 red onion, chopped
3 stalks celery, diced
10 green onions, sliced
2 small zucchini, diced
1 large roasted red pepper, diced
1 (10 ounce) package frozen spinach, thawed
2 tablespoons fresh diced garlic
2 lbs asparagus, trimmed and chopped into 1/2 inch pieces
10 ounces sun-dried tomatoes packed in oil, drained and diced
3 tablespoons fresh sweet basil, chopped
15 lasagna noodles, cooked according to package instructions
8 ounces asiago cheese, shredded (or feta if you would prefer)
6 tablespoons butter
1/2 cup flour
5 cups milk

Steps:

  • Preheat oven to 375 degrees F.
  • Heat oil in a large pot over medium-high heat.
  • Add red onion, green onion, garlic and celery.
  • Saute until onion is translucent and celery starts to soften.
  • Add other veggies, one by one, stirring before adding the next.
  • Cover and cook 5 minutes, stirring once.
  • Uncover and cook til vegetables are tender, stirring often, about 10 minutes longer.
  • Season with salt and pepper.
  • Melt butter in large sauce pan over medium heat.
  • Whisk in flour.
  • Whisk 2 minutes.
  • Gradually whisk in milk.
  • Cook until mixture comes to a boil, whisking often.
  • Remove from heat and season with salt and pepper.
  • Spoon 1 cup of sauce over bottom of your lasagna pan.
  • Arrange 5 lasagna noodles atop sauce, overlapping slightly.
  • Spoon half of vegetables over noodles.
  • Spoon 1 1/2 cups sauce over veggies.
  • Sprinkle 1/3 of your cheese over sauce.
  • Repeat each layer once.
  • Top with the last 5 lasagna noodles.
  • Spoon remaining sauce over noodles.
  • Top with remaining cheese.
  • This is where you would refrigerate for later use, just cover tightly.
  • Bake Lasagna uncovered on center rack until sauce is bubbling, about 40 minutes, 55 minutes if previously chilled.
  • Remove from oven and allow to stand for at least 10-15 minutes before slicing.

SAUSAGE AND VEGGIE LASAGNA ROLLS

1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 medium yellow onion, chopped
1 small yellow squash, finely diced
1 small zucchini, finely diced
Kosher salt and freshly ground black pepper
15 ounces whole-milk ricotta
1/2 cup grated Parmesan
3 tablespoons fresh flat-leaf parsley leaves, chopped
1 large egg, beaten
2 tablespoons extra-virgin olive oil
1 pound bulk Italian sausage
One 24-ounce jar marinara sauce
1/4 cup fresh basil leaves, chopped
Nonstick cooking spray, for the baking dishes
1 pound lasagna noodles, cooked according to package instructions and drained
2 cups grated mozzarella (about 8 ounces)
1/4 cup grated Parmesan

Steps:

  • For the filling: Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook until softened, about 4 minutes. Add the squash, zucchini, a sprinkle of salt and black pepper and cook, stirring frequently, until the squash softens but is not mushy, about 4 minutes. Set aside to let cool.
  • Add the ricotta, Parmesan, parsley, egg, 1/2 teaspoon salt and 1/4 teaspoon black pepper to a large bowl, then add the cooled vegetables. Stir to combine.
  • For the sauce: Heat the oil in a large skillet over medium heat. Add the sausage and cook, breaking into pieces with a wooden spoon, until browned and cooked through, 5 to 7 minutes. Stir in the marinara and bring to a simmer. Let cook for 2 minutes, then remove from the heat and stir in the basil.
  • For the lasagna rolls: Preheat the oven to 375 degrees F. Spray two 8-inch square baking dishes with nonstick cooking spray.
  • Spread about 1/2 cup of the sauce on the bottom of each prepared baking dish.
  • To make the rolls, spread each lasagna noodle with a layer of the ricotta filling. Starting at one end, roll up the noodle. Repeat with the remaining lasagna noodles and ricotta filling. Place half of the lasagna rolls seam-side down in each baking dish.
  • Spread the remaining sauce over the lasagna rolls. Top with the mozzarella and Parmesan. Bake until the sauce is bubbling and the cheese is melted, 35 to 40 minutes. Let stand 10 minutes before serving. Alternatively, bake one dish and freeze the second, tightly wrapped, for up to 2 months. (See Cook's Note.)

2 cloves garlic, finely chopped
2 cans or jars (24 oz each) garlic-and-herb tomato pasta sauce
9 no-boil lasagna noodles
2 cups cooked crumbled Italian turkey sausage
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup frozen corn (from 12-oz bag), thawed
1 zucchini, thinly sliced
Salt and pepper to taste
2 cups shredded Mexican or Italian cheese blend (8 oz)
Fresh cilantro sprigs, if desired

Steps:

  • Heat oven to 350°F. In small bowl, mix ricotta cheese, chopped cilantro and garlic.
  • In 9-inch square pan, spread 1/4 cup of the pasta sauce. Top with 3 noodles; spread 1 cup of the ricotta mixture over noodles. Layer with 1 cup pasta sauce and half each of the sausage, beans, corn and zucchini. Sprinkle zucchini with salt and pepper. Top with 1 cup pasta sauce and 1/2 cup of the shredded cheese. Layer with 3 more noodles, remaining ricotta mixture, 1 cup pasta sauce and remaining sausage, beans, corn and zucchini. Sprinkle with 1/2 cup shredded cheese. Layer with remaining noodles, pasta sauce and shredded cheese.
  • Cover with foil; bake 15 minutes. Uncover; bake 15 to 25 minutes longer or until bubbly and cheese is golden brown. Let stand 10 minutes before cutting. Garnish with cilantro sprigs.

4 sausages vegan Italian sausage
2 lbs low-fat ricotta cheese
5 garlic cloves
3 tablespoons olive oil
1 cup sliced white mushroom
3 cups mushroom garlic pasta sauce
4 -5 green onions
1/2 cup mozzarella cheese

Steps:

  • boil water and make the pasta according to package directions. cook with salt and olive oil to prevent sticking. when done, rinse with cold water and lay in separate strips on foil or plates.
  • preheat oven 350 degrees.
  • saute garlic, crumbled vegan sausage, and mushrooms in olive oil.
  • add tomato sauce to the mushrooms & sausage. simmer on low. add up to 1/2 cup water and wine to taste to make this more liquidy.
  • in a separate medium mixing bowl, combine ricotta cheese and chopped green onion.
  • layer a 9X13X2 pan with 1/3 of sauce mixture. lay 3 strips pasta on top. spread 1/2 ricotta mixture over this. repeat sauce, pasta, cheese layers until you run out. top it off with pasta. add any sauce that's left. add shredded mozzarella cheese. cover with foil.
  • bake at 350 degrees for 40 minutes.
  • let stand 10 minutes before serving.

TUNA VEGGIE ALFREDO LASAGNA

This is a combo I came up with to please the very different tastes in my family. This is one combination of ingredients that everyone will eat.

6 no-boil lasagna noodles (I like Barilla)
1 (16 ounce) jar roasted garlic alfredo sauce (such as Bertoli)
10 ounces frozen spinach, thawed and squeezed dry
8 ounces fresh mushrooms, sliced
1 cup diced fresh zucchini
1 cup sliced green onion (include green parts)
1/2 cup chopped green pepper
1 tablespoon olive oil
1 (6 ounce) packet albacore tuna (not a 6 oz. can, you want 6 oz. of tuna, not 6 oz. of tuna and water)
1 cup freshly grated parmesan cheese
9 slices provolone cheese
2 -3 cups shredded mozzarella cheese (I use a lot)
1/3 cup good white wine

Steps:

  • Mix together alfredo sauce and wine.
  • Briefly stir-saute all prepared vegetables in olive oil, except spinach, about two minutes over medium heat.
  • In a large oiled loaf pan, pour 1/2 cup alfredo sauce mix.
  • Top with two uncooked lasagna sheets, breaking the second to fit any uncovered sauce.
  • Top with 1/3 tuna, 1/3 vegetables (pull spinach into small pieces), and 1//3 of each cheese.
  • Pour 1/3 of remaining sauce on top.
  • Repeat layers twice more, reserving the last 1/3 of cheeses for later.
  • (You'll end with sauce).
  • Cover the pan tightly with foil.
  • Bake at 375 for 50 minutes, remove foil, top with remaining cheeses, reduce heat to 350, and bake for another 20 minutes, until top cheese is bubbling and starting to brown.
  • Remove from oven and allow to sit for at least 10 minutes before serving.
  • (15 minutes is better if you can stand it!).
  • Slice crosswise in about two inches slabs and serve with your favorite green salad and good chewy bread.
  • Be warned, this is very rich, but it's hard to stop eating.
  • NOTE: Please try to use the albacore tuna in the foil pouch, if at all possible.
  • The taste is noticably better than any canned albacore I've tried.

1 (1 ounce) package herb and garlic soup mix

1 (10 ounce) package frozen sliced carrots
1 (10 ounce) package frozen corn kernels

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl combine eggs, ricotta cheese, mushroom soup, Cheddar cheese, Parmesan cheese, sour cream and soup mix.
  • In prepared dish layer noodles, cheese mixture, broccoli, carrots and corn. Repeat layers with remaining ingredients, ending with cheese.
  • Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes.
