4 large portabella mushrooms, stems removed
1 (6 ounce) can tomato paste
1 (8 ounce) can diced tomatoes and green chilies, drained
1 tablespoon anchovy paste (optional)
2 teaspoons minced garlic
1/2 medium yellow onion, slivered
1/2 cup light cheddar cheese, shredded
1/2 cup feta cheese, crumbled (or blue cheese)
1/2 green bell pepper, sliced
1/2 yellow bell pepper, sliced
salt
pepper

Steps:

  • In medium bowl, mix flour, salt, thyme and oil until all flour is moistened. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all water is absorbed.
