1 red onion, chopped
4 cloves garlic, minced
4 tablespoons dark brown sugar
3 cups red wine
4 tablespoons red wine vinegar

½ teaspoon cayenne pepper
½ teaspoon chili powder
2 tablespoons chopped fresh cilantro
salt to taste
4 tablespoons canola oil
10 slices cooked bacon, diced
2 pounds venison stew meat, trimmed and finely diced
2 cups black beans, cooked and drained

Steps:

  • Melt the butter in a large pot over medium heat. Stir in the onion and garlic, and saute for 3 to 4 minutes. Stir in the brown sugar and saute for 2 to 3 more minutes. Then stir in the red wine, vinegar, tomato paste, chicken stock, cumin, cayenne pepper, chili powder, cilantro and salt. Simmer for 30 to 35 minutes, or until the mixture is reduced by about half.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Stir in the bacon and fry for 3 to 4 minutes, or until the bacon is browned. Move the bacon to one side of the skillet and add the venison to the empty side of the skillet. Season the meat with salt to taste and saute the meat for 15 minutes, or until well browned. Stir in the beans and toss all together. Transfer this mixture to the simmering pot.
  • Mix everything together thoroughly and let simmer for about 20 more minutes.

3 pounds venison shoulder, cut into 3/4-inch cubes
1 green pepper, diced
2 cups diced red onion
3 celery stalks, diced
3 jalapenos, diced

2 tablespoons dried Mexican oregano
2 tablespoons ground coriander
2 tablespoons ground cumin
2 tablespoons ground cayenne
2 tablespoons ground chipotle

2 cups veal stock
1 bottle beer
1 small can chipotles, pureed
2 cups cooked black beans
1 (16-ounce) can peeled and diced tomatoes

Steps:

  • Add 1/2 cup of oil in a large saucepan and heat. Add the venison and brown, in batches, and set aside. Add pepper, onion, celery, jalapeno, and garlic and saute over a low heat until they are tender.
  • Add the remaining oil, all of the dry spices and the venison and stir, completely incorporating the ingredients. Add the stock, beer, beans, tomatoes, and chipotle puree.

1 cup chopped onion
1 cup chopped celery
1 cup chopped green pepper
3 -4 garlic cloves, chopped

2 tablespoons extra-virgin olive oil
4 slices bacon, chopped
2 pounds venison stew meat, cut into 1- or 2-inch chunks
Kosher salt
Freshly ground black pepper
1 medium onion, chopped
1 red bell pepper, chopped
1 (4-ounce) can chopped green chilies, drained
3 cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon paprika (preferably smoked)
1/4 teaspoon chipotle chili powder
1 cup dark beer (such as Dos Equis)
1 (28-ounce) can fire-roasted whole tomatoes, crushed by hand
1 (14 1/2-ounce) can low-sodium beef broth
1 chipotle chili in adobo, chopped, plus 2 tablespoons sauce from the can
2 tablespoons light brown sugar
2 tablespoons unsweetened cocoa powder

Steps:

  • Heat a large Dutch oven over medium heat. Add the olive oil and bacon and cook until the bacon renders its fat, about 4 minutes. Remove the bacon to a paper towel-lined plate to drain.
  • Pat the venison dry with paper towels and season with salt and pepper. In batches, cook the meat in the Dutch oven until browned all over, about 6 minutes per batch. Remove the meat to a plate as it browns.
  • Once all of the meat is out of the pot, add the onion, bell pepper, green chilies, and garlic and cook until the onion and pepper begin to soften, about 5 minutes. Add the chili powder, cumin, paprika, and chipotle powder and cook until the vegetables are coated with the spices, about 1 minute. Pour in the beer, bring to a boil, and boil until reduced by half, about 2 minutes. Add the tomatoes, beef broth, chopped chipotle and chipotle sauce, brown sugar, and cocoa powder. Bring to a simmer and add the bacon and venison back. Simmer the stew, partially covered, until the meat is tender and the sauce is thick and flavorful, 1 1/2 hours to 1 hour and 45 minutes, uncovering for the last half an hour. If the meat is tender but the sauce is too thin, simmer rapidly over high heat for a minute or two to reduce, stirring to keep the bottom from burning.

4 pasilla chiles, seeded
2 ancho chiles, seeded
1 chile de arbol, seeded
1 1/2 cup chicken stock, plus more as needed for pureeing
2 corn tortillas, quartered
6 tablespoons corn oil
1 1/2 pounds ground venison
1 large yellow onion, diced
4 cloves garlic, minced
2 tablespoons ground cumin
1 1/2 cup dark beer
4 cups chicken stock
8 sprigs fresh cilantro
1 cinnamon stick
Fresh lime juice, for serving
Salt and freshly ground black pepper

Steps:

  • For the chili puree: Combine the pasilla chiles, ancho chiles, chile de arbol and chicken stock in a medium saucepan over high heat. Bring to a boil, then lower the heat and simmer, stirring occasionally, until the chiles are soft, about 10 minutes. Cool slightly. Pour into a blender. Add the tortillas and puree until smooth. The chili mixture should be quite thick with just enough liquid to puree. You may need to add a bit of additional stock.
  • For the chili: Heat the oil in a large saute pan over medium-high heat. When the oil smokes, add the venison and cook, stirring twice, until just brown, about 5 minutes. Remove the meat with a slotted spoon and set aside.
  • Add the onion to the pan with the hot oil and cook until well browned, about 5 minutes. Add the garlic and cumin and cook for 1 minute. Add the chili puree and cook, stirring often to prevent scorching, until thick and very dark, about 7 minutes. Stir in the venison, beer and chicken stock. Lower the heat and simmer, uncovered, until very thick and reduced by half, about 1 hour.
  • Tie the cilantro and cinnamon stick together with kitchen twine. Remove the chili from the heat and stir in the cinnamon and cilantro bundle. Let stand, without stirring, for 15 minutes. Remove the cinnamon and cilantro bundle. Let stand, without stirring, for 15 more minutes, then stir in some lime juice to taste. Season with salt and pepper.

1 onion, diced and seperated
14 ounces beef stock

7 ounces chili peppers (use your favorite pepper to adjust heat to your taste)
3 tablespoons chili powder

Steps:

  • Chop meat and vegetables.
  • Season and brown meat in a coated large pot along with the garlic and half of the chopped onion.
  • Add beef stock, Chili Powder,Salt, Pepper, and Paprika and bring to a boil. Reduce heat and simmer for 30 minutes, this will allow the meat to absorb the flavor of the spices. Stir as needed.
  • Stir in peppers, remaining onion, celery, and mushrooms. Simmer for another 30 minutes, stirring as needed, to allow the vegetables to absorb the flavor of the spices.
  • Add stewed tomatoes, green onions and cilantro and stir.
  • Slow cook for 2-4 hours, stiring as needed. If you need more liquid, just add more beef stock.

Steps:

  • Cube the venison steak (1/4 inch cubes); dice the onions and green peppers; mince the garlic; shred the monterey jack cheese.
  • In a large pot, over medium high heat, in the vegetable oil, cook the venison cubes (a third at a time), stirring frequently until browned on all sides, removing venison to a bowl as it browns; set aside;.
  • Reserve 1/2 cup diced onions for sprinkling over chili later. In the pan drippings in the large pot, over medium heat, cook the green peppers, garlic, crushed red pepper, and remaining onions until the vegetables are tender, stirring occasionally, and adding more oil if necessary.
  • Return the meat to the pot; add tomatoes with their liquid and the remaining ingredients except the shredded cheese; over high heat, heat to boiling. Reduce the heat to low, cover the pot and simmer for 1 hour or until the venison is fork tender, stirring occasionally.
  • Serve the chili in bowls and pass the shredded cheese and remaining onions to sprinkle.
  • I always like to make some garlic bread and a salad to go with this. It's really good - especially when the weather is cold (and the fireplace is hot).

4 teaspoons beef bouillon granules

My own take on Instant Pot® venison chili!

1 tablespoon olive oil
2 pounds ground venison
2 teaspoons ground black pepper
2 (29 ounce) cans tomato sauce
1 (28 ounce) can diced tomatoes
1 (14.5 ounce) can diced tomatoes
2 (15 ounce) cans chili beans
1 (15 ounce) can dark kidney beans
1 (15 ounce) can black beans
1 medium white onion, finely chopped
4 cloves garlic, pressed
2 tablespoons unsweetened cocoa powder
2 teaspoons dried marjoram
2 teaspoons chili powder
2 teaspoons dried parsley
1 teaspoon red pepper flakes
3 bay leaves, or more to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add olive oil, and select Saute function. Add ground venison and pepper; cook and stir until browned and crumbly, 5 to 7 minutes. Add tomato sauce, diced tomatoes, chili beans, kidney beans, and black beans; stir to combine.
  • Mix in onion and garlic, and then add cocoa powder, marjoram, chili powder, parsley, red pepper flakes, and bay leaves. Stir until well combined and cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove bay leaves before serving.

1 pound bulk hot Italian sausage
1 large onion, diced
1 medium sweet red pepper, diced
2 pounds venison steak, cut into 1-1/2-inch cubes
2 tablespoons olive oil
1 can (28 ounces) crushed tomatoes
1 can (14-1/2 ounces) beef broth
1/4 cup tomato paste
1 tablespoon brown sugar
2 teaspoons ground cumin
2 teaspoons chili powder

Steps:

  • In a Dutch oven, cook the sausage, onion and red pepper over medium heat until meat is no longer pink; drain and set aside. , In the same pan, brown venison in oil; drain. Add the tomatoes, broth, tomato paste, brown sugar, cumin, chili powder, oregano, pepper flakes, salt, pepper and sausage mixture. Simmer, uncovered, for 1 to 1-1/2 hours or until venison is tender. Stir in parsley. Serve with rice if desired.

My husband loves venison chili. We hope that you will enjoy this spicy dish, which can be made hotter or milder, by adding or decreasing the amount of chili powder and peppers. When cooking with venison, I always add ground pork or bacon because venison is very lean and can dry out easily. For the best tasting chili remove from heat, let the chili cool completely, then cover and refrigerate it until the next day.

1 lb ground venison
1 lb ground pork
1 tablespoon butter
1 tablespoon oil
1 onion, large, Spanish, chopped
2 garlic cloves, large, minced
1 cup bell pepper, sweet (green or red or yellow or or orange)
1/2-1 teaspoon sea salt, coarse
3 -4 teaspoons sugar
4 -6 tablespoons chili powder, Mexican
1/4 teaspoon red pepper flakes, New Mexico, hot dried
1/2-1 teaspoon cayenne pepper
1/4-1/2 teaspoon red pepper flakes
1/4-1/2 teaspoon Tabasco sauce
1/2 teaspoon ground allspice
1/2-1 teaspoon ground cumin (optional)

Steps:

  • In a large pan saute the onions and garlic in oil and butter until they are limp and golden.
  • Next add the ground venison & pork, stirring until well browned.
  • Then add the rest of the ingredients except for the beans and cook on high for 5 minutes making sure to stir constantly at this stage.
  • Lower heat, cover and simmer for 30 minutes.
  • Add the drained kidney beans and stir to blend the flavors together.
  • Place the chili in a slow cooker on low and cook for 2 - 3 hours.
  • Cook until the chili is thickened and rich in flavor.
  • Remember to taste your chili as it's cooking to see if you need to adjust your seasonings.
  • Adjust the spices accordingly and add more liquid if the mixture gets too dry.
  • Top with a mixture of shredded cheddar & Monterey jack cheese & thinly sliced green onions.

BEEF, MOOSE OR VENISON CHILI

This is a really thick hot chile. I myself don't use the hot peppers or Tabasco sauce. I also use the ground red pepper instead of the crushed red pepper. I like my chili a little more thinner so I also add tomato juice. Make this on a nice cold day and it'll heat you up in no time.

2 (24 ounce) cans tomato sauce

1 teaspoon Tabasco sauce
1 lb bacon, chopped
2 tablespoons cumin, ground
1 tablespoon red pepper, crushed
1 tablespoon msg
12 garlic cloves, minced
1 tablespoon oregano
1 teaspoon Worcestershire sauce
2 tablespoons bacon drippings
1 tablespoon black pepper
1 (16 ounce) can kidney beans

Steps:

  • In a large chili pot, combine: tomato sauce, tomato paste, beer, chopped peppers, chili powder, vinegar, Tabasco sauce, cumin, crushed red pepper, oregano, Worcestershire sauce, salt and pepper. Bring to simmer.
  • In a large frying pan cook bacon until crisp.
  • Add bacon and 2 TB drippings to chili pot.
  • Brown moose meat, onions, garlic and MSG and add to chili pot.
  • Cover pot and simmer for one hour.
  • Add beans to chili pot and simmer 1/2 hour more.
  • If you like your chili thinner add tomato juice.

1 (16-ounce) can chopped tomatoes
1 cup beef stock
Salt and pepper
1 cup grated Sonoma Jack cheese
4 strips bacon, diced
2 1/2 pounds leg or shoulder of venison, cut into 1/2-inch cubes
1 cup chopped onions
1 cup chopped green bell peppers
2 garlic cloves crushed
1 cup Cabernet Sauvignon or other dry red wine
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 teaspoon cayenne pepper

Steps:

  • In a large saucepan, cook the bacon until the fat is rendered, 4 to 6 minutes. Remove the bacon using a slotted spoon and transfer to paper-lined plate to drain. Add the venison to the hot oil in the pan and cook, stirring occasionally and in batches if necessary, until well seared. Remove from the pan and set aside. Add the onions, bell peppers and garlic and saute over medium-low heat until tender. Stir in the wine and the tomato paste. Bring the mixture to a boil. Stir in the dry spices, chopped tomatoes and the beef stock. Season lightly with salt and pepper. Simmer uncovered for 35 to 45 minutes, or until the sauce is very thick and flavorful. Add the venison to the pot and cook, stirring, until just cooked through and hot, 3 to 4 minutes. Check the seasoning and serve with the grated cheese.

2 1/2 cups onions, chopped
5 garlic cloves, minced
2 (1 ounce) packages chili seasoning mix
1 tablespoon steak sauce
1 teaspoon fresh ground black pepper
1 teaspoon red pepper flakes
2 tablespoons chili powder
1 tablespoon cajun seasoning
1 (18 ounce) can tomato juice
2 (15 1/2 ounce) cans pinto beans, drained
2 teaspoons dried basil, crumbled
1 teaspoon dried oregano, crumbled
1 (1 g) packet sugar substitute
2 (7 ounce) cans mushrooms
1 large green bell pepper, chopped

Steps:

  • Coat bottom of a large Dutch oven with cooking spray (I use garlic flavour).
  • Add oil, heat over medium heat.
  • Brown together venison, onion, and garlic until venison is completely browned and onions are translucent.
  • Stir in chili seasoning.
  • Add steak sauce and next 5 ingredients.
  • Reduce heat to low; cover and simmer for at least one hour, stirring occasionally.
  • Add beans and rest of ingredients.
  • Continue simmering at least one more hour, until done, stirring occasionally.
  • For thicker chili, remove cover for last half hour of cooking.
