This is as easy at it sounds - almost effortless, really. Just be sure to use a vermouth you really love (I'm a fan of dark, robust, earthy Spanish ones) and keep the bottle in the fridge.

- Fill a highball or large wine glass with ice. Add the vermouth and top up with the soda water. Garnish, if desired, with a fat wedge of lemon or orange or grapefruit, and/or a nice olive or two. Want something stronger? Add a slug of gin.

- Combine the bourbon, orange juice, orange liqueur and sweet vermouth in a punch bowl. Cover and chill until ready to serve, at least 2 hours.
- To serve, stir in the sparkling water, orange rings, blood orange rings and blackberries. Serve over an ice block or with large cubes of ice.
CITRUS-BERRY VERMOUTH SPRITZ

- In a pitcher, combine the rose vermouth with the club soda. Divide among 4 glasses along with the berries and the berry ice cubes. Give the mint leaves a rub and add to each glass.

Try this spritz for a party. It's sure to impress with a hint of lavender putting a lightly floral twist on a Perfect (sweet vermouth, dry vermouth and gin)

Steps:
- Pour both types of vermouth and the gin into a clean glass bottle or jug and add the dried lavender. Stir and leave to infuse overnight (in the fridge or in a cupboard).
- Allow 50ml per person and strain into glasses over ice. Serve neat with lots of ice or top with soda or tonic water and add some lemon wedges and a sprig of lavender.
