1/2 teaspoon baking powder

1 egg, slightly beaten
1 teaspoon vanilla
1 1/2 cups fresh mixed berries, such as blueberries, raspberries and coarsely chopped strawberries

A very quick recipe that isn't all too unhealthy! However much I love sweets, I rarely bake extremely sweet cakes! Baking is absolutely NOT an exact science, so do play around with the sweetness to find the exact amount and kind of sugar you'd like to use. Additionally, this recipe can be made vegan by substituting dairy milk for a non-dairy alternative! I use tartar and baking soda instead of Baking Powder, but both can be used. I prefer whole wheat flour over all purpose flour, so please go with what you prefer.

4 tablespoons whole wheat flour or 4 tablespoons all-purpose flour
1/4 teaspoon cream of tartar and 1/8 tsp baking soda or 1/2 teaspoon baking powder
