1 pound uncooked medium shrimp, peeled and deveined
1 tablespoon salt
2 tablespoons white sugar
¼ cup coconut water
1 teaspoon maple syrup
2 tablespoons olive oil
1 dash sesame oil
1 shallot, minced
3 cloves garlic, minced
2 tablespoons fish sauce
1 tablespoon chopped fresh chives

Steps:

  • Clean the shrimp by placing them in a bowl and rinsing them with water. Drain. Add salt and rub into shrimp thoroughly. Rinse well again. Set aside for 15 minutes.
  • Heat sugar in a heavy pot over medium-low heat and stir until melted. Once sugar begins to caramelize, pour in coconut water, using caution so it does not splatter. Pour in maple syrup. Stir until sugar syrup is well combined and smooth. Remove pot from heat and set aside.
  • Warm olive oil and sesame oil in a saute pan over medium heat. Add shallot and garlic and cook until shallot is soft and translucent, about 5 minutes. Add fish sauce and sugar syrup; stir for 1 to 2 minutes.

1 lb large shrimp, peeled and deveined
wooden skewer
1 small onion, minced,rinced under cold water,and drained
2 cloves garlic, minced
1 teaspoon vegetable oil
1 -2 dash fish sauce
1 lime, juice of
1 teaspoon fresh ground pepper
1/2 teaspoon sea salt
1/2 teaspoon fish sauce
1/2 teaspoon sugar

Steps:

  • Mix the onion, garlic, oil, and fish sauce in a bowl large enough to hold the shrimp.

8 oz rice sticks
12 medium-sized shrimp, shelled (but leave tail intact) and deveined
3 lettuce leaves, thinly cut
1/2 small cucumber, cut into thin strips
1 cup fresh bean sprouts
1/2 small carrot, peeled and cut into thin strips
Some cilantro leaves, coarsely chopped
Some mint leaves, coarsely chopped
Some perilla leaves, coarsely chopped (optional)
Some Thai basil leaves, coarsely chopped (optional)
3 tablespoons roasted peanuts, coarsely ground
1 teaspoon fish sauce
3 heavy dashes black pepper powder
A pinch of turmeric powder
Nuoc Cham (Fish Sauce or Vietnamese Dipping Sauce) Recipe
1/4 cup fish sauce
1/2 cup warm water
1/4 cup sugar + 1 tablespoon sugar (if you like it sweeter)
