Provided by Martina McBride

Time 35m

Yield 6 servings

Number Of Ingredients 14

1/4 cup sugar
1/2 cup pecan halves
1/3 cup extra-virgin olive oil
3 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
1 garlic clove, minced
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
2 romaine hearts, torn (about 6 cups)
2 ripe pears, thinly sliced or chopped (about 3/4 cup)
5 ounces smoked blue cheese, crumbled
1 avocado, diced
4 thinly sliced green onions (about 1/2 cup)

Steps:

  • Cook the sugar and pecans in a small skillet over medium, 5 to 7 minutes or until the sugar has caramelized. Spread the pecans in a single layer on lightly greased wax paper on a large baking sheet. Let them cool completely and then chop into 1/2-inch pieces.
  • Whisk together the olive oil, vinegar, Dijon, garlic, salt, sugar, and pepper in a small bowl.
  • Layer the lettuce, pears, cheese, avocado, and green onions on a large serving platter. Drizzle with the desired amount of dressing, and top with the pecans.

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 (15 ounce) can whole pears (bartlett preferred)
1 cup dry red wine
2/3 cup sugar
3 tablespoons lemon juice
6 ounces of creamy blue cheese (I recommend cambazola)
1 baguette

Steps:

  • Preheat over to 350 degrees.
  • Simmer wine, sugar and lemon juice and mix for about 10 minutes.
  • Cut up pears into thin half moon slices.
  • Simmer pears in wine until liquid begins to thicken slightly. You want a syrupy consistency, not molasses.
  • Cut half of the baguette into slices (cut at an angle gives you wider slices).
  • Grease a baking pan to fit the slices.
  • Smear a layer of blue cheese on top of each piece of bread.
  • Using tongs, gently place 2 poached pear slices on each piece of bread.
  • Bake for 15 minutes, or until bread looks lightly toasted.

PIMENTO CHEESE TOASTS

Pimento Cheese Toasts image

This pimento cheese is a little different in that it is made with roasted peppers and spread on tiny toasts, then broiled to transform it into hot melted heaven. A combination of sharp orange and white cheddar works well. You can make the cheese spread up to 3 days ahead and have it covered and chilled in the fridge until ready to use. Tips:

  • Choose ripe pears: Use ripe, firm pears that are not too soft. This will help them hold their shape when cooked.
  • Use a good quality red wine: The red wine you use will contribute to the flavor of the dish, so choose a wine that you enjoy drinking. A dry red wine with a medium body, such as a Cabernet Sauvignon or Merlot, is a good option.
  • Don't overcrowd the pan: When cooking the pears, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Cook the pears until they are tender: Cook the pears until they are tender but still hold their shape. This will take about 10-15 minutes.
  • Use a good quality blue cheese: The blue cheese you use will also contribute to the flavor of the dish, so choose a cheese that you enjoy. A strong, pungent blue cheese, such as a Roquefort or Gorgonzola, is a good option.
  • Serve the toasts immediately: The toasts are best served immediately after they are made. This will ensure that the pears are still warm and the blue cheese is melted.
