Yield 10 serving(s)

Number Of Ingredients 8

1 large sweet onion, chopped
5 garlic cloves, coarsely chopped
3 tablespoons extra virgin olive oil
2 (28 ounce) cans crushed tomatoes
1 1/4 cups vodka, premium quality, will make a difference
2 cups heavy cream
4 tablespoons fresh basil, finely chopped
1 (5 1/2 ounce) can tomato paste

Steps:

  • Sauté onion, garlic, and olive oil in large sauce pot until translucent, do NOT overcook or brown.
  • Add 2 cans of crushed tomatoes, and vodka.
  • Cook about 1/2 hour or until all alcohol has burned off.
  • Add heavy cream and basil.
  • Add tomato paste to your discretion, although sauce should be of a thick consistency, some people like theirs thin.
  • Let sauté about 1/2 hour.
  • Serve with penne and freshly grated parmesan cheese.

Tips:

  • Use fresh ingredients. The fresher the ingredients, the better the cocktail sauce will taste. This is especially true for the tomatoes, onions, and horseradish.
  • Taste the sauce as you go. Adjust the seasonings to your liking. You may want to add more horseradish for a spicier sauce, or more lemon juice for a tangier sauce.
  • Let the sauce chill for at least 30 minutes before serving. This will allow the flavors to meld together.
  • Serve the sauce with your favorite seafood dishes. Cocktail sauce is a classic accompaniment to shrimp, crab, and fish.

Conclusion:

Cocktail sauce is a versatile condiment that can be used to add flavor to a variety of seafood dishes. It is easy to make and can be tailored to your own taste preferences. With just a few simple ingredients, you can create a delicious and flavorful cocktail sauce that will elevate your next seafood meal.
