COPYCAT OLIVE GARDEN HOT SPINACH AND ARTICHOKE DIP
I found this recipe on a (since-forgotten) web-site years ago and have been making it since. It's a copycat of Olive Garden's Spinach and Artichoke dip. I find it extremely similar. Whenever I have to go somewhere that I bring an appetizer, this is always the one that is requested.

Tips:
- Choose the right artichokes. Fresh artichokes are best, but canned or frozen artichokes can also be used. If using fresh artichokes, look for ones that are heavy for their size and have tightly closed leaves.
- Prepare the artichokes properly. If using fresh artichokes, trim the stems and remove the tough outer leaves. Cut the artichokes in half and scoop out the fuzzy choke from the center.
- Use a variety of cheeses. A combination of cheeses, such as Parmesan, mozzarella, and cream cheese, adds flavor and richness to the dip.
- Add some herbs and spices. Herbs like basil, oregano, and thyme, and spices like garlic powder, onion powder, and black pepper add depth of flavor to the dip.
- Don't overcook the dip. The dip should be heated through, but not boiling. Overcooking can make the dip rubbery.
- Serve the dip warm. Artichoke dip is best served warm, with crackers, bread, or vegetables for dipping.
