Warm German - and Vegan! - Potato Salad image

This is an adaptation of an older German recipe - specifically, it's veganized! I modified it from the VegFamily website. It takes less than forty minutes, since the sauce is made while the potatoes cook. Enjoy!

I came across this recipe while we were in Germany, it is served warm normally but I have served it cold too....So it is good either way...I use the yellow meated potatoes because they have a better flavor in the potato salad...I use the Yukon Gold...I do not have a picture of the dish as of yet so I have a free picture from on...

Time 55m

Number Of Ingredients 14

5 lb potatoes, sliced (yukon, yellow unpeeled)
1 c carrots, grated
1 c celery stalk, sliced
1 c green onions, chopped
2 Tbsp fresh parsley (chopped)
1/2 lb bacon, cooked (crumbled)
SAUCE
3/4 c sugar
2 Tbsp flour
1 c apple cider vinegar
1/2 c water
1 tsp german mustard
1 tsp sea salt
SEA SALT AND FRESH GROUND PEPPER TO TASTE

Steps:

  • 1. Boil potatoes for 25 minutes and then run in cold water and slice into a large bowl and set aside. Cook bacon and reserve the bacon grease....crumble the bacon in a separate bowl and set aside.
  • 2. Sauté celery, and onion in the bacon grease till they are tender.
  • 3. Combine the sugar and flour, add to the skillet with the apple cider vinegar, water, salt and mustard. Stir constantly while cooking till the sauce thickens and comes to a boil.....
  • 4. Combine potatoes, carrots and parsley. Pour sauce over the potatoes, carrots and parsley stir carefully while coating the potatoes and carrots and parsley.
  • 5. Season to taste with sea salt and fresh ground pepper, crumble bacon on top and serve warm....

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or fingerling potatoes, hold their shape well and are less likely to fall apart when cooked. Avoid starchy potatoes, such as Russet potatoes, which tend to become mushy when cooked.
  • Cut the potatoes into uniform pieces: This will help them cook evenly. If the pieces are too small, they will overcook and become mushy. If the pieces are too large, they will take too long to cook and may not be cooked through.
  • Boil the potatoes in salted water: This will help to flavor them and prevent them from becoming bland.
  • Drain the potatoes thoroughly: Any excess water will dilute the dressing and make the salad watery.
  • While the potatoes are still warm, toss them with the dressing: This will help the dressing to coat the potatoes evenly.
  • Let the salad cool slightly before serving: This will allow the flavors to develop and meld together.

Conclusion:

German potato salad is a delicious and versatile dish that can be served as a side dish or a main course. It is a popular dish at picnics, potlucks, and other gatherings. With its simple ingredients and easy-to-follow instructions, this recipe is sure to become a favorite.
