Categories     Salad     Vegetable

Yield 6

Number Of Ingredients 9

1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon freshly ground pepper
1 1/2 teaspoon butter
1 large grapefruit, peeled and sectioned, with sections cut in half
1 teaspoon paprika
1/2 teaspoon salt
1/2 pound baby spinach leaves
3 tablespoons freshly grated romano cheese

Steps:

  • In a small bowl, whisk together vinegar, olive oil, and pepper to make vinegarette Melt butter in large non-reactive skillet over med.-high heat. When butter begins to foam, add grapefruit, paprika, and salt. Reduce heat slightly and saute until grapefruit is heated through, about 2 to 3 minutes. Add spinach leaves and gently fold them together with the warm fruit just long enough to wilt the spinach , about 45 seconds. Transfer the warm spinach grapefruit mixture to salad bowl and add the vinegarette. Sprinkle with remaining cheese.

Tips:

  • Choose the right grapefruit: Select grapefruits that are heavy for their size and have smooth, unblemished skin. Avoid fruits with soft spots or bruises.
  • Prepare the grapefruit properly: Cut the grapefruit in half and remove the seeds. Use a sharp knife to cut the grapefruit into segments, following the natural lines of the fruit.
  • Use fresh baby spinach: Baby spinach has a delicate flavor and tender texture that pairs well with grapefruit. Rinse the spinach thoroughly before using.
  • Make a simple dressing: A simple vinaigrette dressing made with olive oil, lemon juice, honey, and Dijon mustard is a great way to enhance the flavors of the salad.
  • Add some crunch: To add a bit of crunch to the salad, you can add toasted nuts, seeds, or croutons.
  • Serve immediately: Grapefruit salad is best served immediately after it is made. The grapefruit segments will start to lose their juiciness and flavor if they sit for too long.
