GREEK RICE SALAD

Delicious. The avocado makes the dressing a little creamy, though feel free to leave it out if you wish. Best made the same day you are going to serve it.

Time 2h

Yield 8

Number Of Ingredients 15

1 cup uncooked long grain brown rice
2 ½ cups water
1 avocado - peeled, pitted, and diced
¼ cup lemon juice
2 vine-ripened tomatoes, diced
1 ½ cups diced English cucumbers
⅓ cup diced red onion
½ cup crumbled feta cheese
¼ cup sliced Kalamata olives
¼ cup chopped fresh mint
3 tablespoons olive oil
1 teaspoon lemon zest
½ teaspoon minced garlic
½ teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes; remove from heat and allow to cool, fluffing occasionally with a fork.
  • Toss the avocado and lemon juice together in a large bowl. Add the tomatoes, cucumber, onion, feta, olives, mint, olive oil, lemon zest, garlic, salt, and pepper to the bowl; lightly toss the mixture until evenly combined. Fold the cooled rice gently into the mixture. Serve immediately or chill up to 1 hour; the salad does not last well for more than a day as the tomato and cucumber begin to release their juices and the salad becomes watery.

Time 25m

Number Of Ingredients 17

1 tbsp vegetable oil
1 cup rice
1 tsp salt
1 3/4 cups water
1/4 cup red onion (finely chopped)
1/4 cup fresh parsley (finely chopped)
1/4 cup sliced black olives
1/2 cup red pepper (chopped)
3/4 cup English cucumber (chopped)
3/4 cup artichoke hearts (drained and chopped)
3/4 cup feta cheese (crumbled)
1/4 cup extra virgin olive oil
1 tbsp fresh lemon juice
1 tbsp red wine vinegar
1 tbsp granulated sugar
1/4 tsp salt
1/4 tsp black pepper

Steps:

  • Add the vegetable oil to a non-stick pot and heat over medium heat.
  • Add the rice and salt. Cook for a couple of minutes, stirring often, to toast the rice a bit.
  • Pour in the water and stir
  • Bring the rice to a gentle boil.
  • Turn the heat to low and cover the pot. You want the rice to gently simmer. Low heat on a gas stove is plenty for simmering. If cooking on an electric stovetop, you may need to set the burner to medium-low heat.
  • Cook the rice, with the lid on, for 15 minutes, or until the water has been absorbed
  • Fluff the rice with a fork and allow to cool for about 30 minutes (with the lid on the pot).
  • Transfer the rice to a large bowl.
  • Add the red onion, parsley, black olives, red pepper, cucumber, artichoke hearts and feta cheese. Stir to combine.
  • In a glass bowl or measuring cup, whisk together the olive oil, lemon juice, red wine vinegar, sugar, salt and pepper. Pour the dressing over the rice salad and toss well to combine.
  • Can serve immediately. Or cover and chill until ready to serve.

Mediterranean Rice Salad with Vegetables image

This colorful Mediterranean rice salad is a great summertime dish. I used fresh zucchini, carrots, and bell peppers, but you can add any vegetable you like. Replace rice with couscous, farro, or barley, if you prefer.

Tips:

  • Choose the Right Rice: Use a short-grain rice like Arborio or Carnaroli for a creamy texture. If using long-grain rice, rinse it thoroughly before cooking.
  • Cook the Rice Properly: Follow the package instructions for cooking the rice. Generally, you'll need 1 cup of rice to 2 cups of liquid. Bring the liquid to a boil, then add the rice and stir. Reduce heat to low, cover, and simmer until the rice is tender and all the liquid has been absorbed.
  • Use Fresh Vegetables: Fresh vegetables will give your salad the best flavor. If you can't find fresh vegetables, frozen vegetables will also work.
  • Don't Overcook the Vegetables: Vegetables should be cooked until they are tender-crisp. Overcooked vegetables will become mushy and lose their flavor.
  • Use a Good Quality Olive Oil: Olive oil is a key ingredient in Greek cuisine. Use a good quality extra virgin olive oil for the best flavor.
  • Season to Taste: Season the salad with salt, pepper, and lemon juice to taste. You can also add other herbs and spices, such as oregano, thyme, or cumin.

Conclusion:

This warm Greek-style rice salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. With its colorful vegetables, flavorful dressing, and fluffy rice, this salad is sure to be a hit at your next gathering.
