WARM SPICED VANILLA COCKTAIL

Cinnamon, nutmeg, vanilla, Irish cream, and bourbon make for a cozy hot cocktail that'll warm up the coldest of winter nights.

Number Of Ingredients 12

4 cups milk (I use 2%, but whole would also be good)
1/4 cup pure maple syrup
1 5-inch cinnamon stick
1/2 teaspoon freshly ground nutmeg
2 star anise
1 vanilla bean (optional)
2/3 cup Irish cream liqueur (like Baileys)
1/3 cup bourbon (like Maker's Mark)
2 teaspoons pure vanilla extract
1 tablespoon pure maple syrup
2 tablespoons granulated sugar
1 teaspoon ground cinnamon

Steps:

  • To a medium saucepan over medium-low heat, add the milk, maple syrup, cinnamon stick, nutmeg, and star anise. If using a vanilla bean, split it open and scrape out the seeds. Add the seeds and remainder of vanilla bean to the pan. Cook, stirring occasionally, until the mixture is hot and steaming. Reduce to low and heat for 5 minutes, being careful not to ever let it come to a full boil. Remove from heat. Place a fine-mesh sieve over a large heat-proof bowl and carefully pour the liquid over the sieve. Discard the solids. Add the liquid back to the saucepan. Stir in the Irish cream, bourbon, and vanilla extract.
  • To garnish the mug rims, pour the 1 tablespoon pure maple syrup into a small saucer. In a small bowl, mix together the sugar and cinnamon, then pour it onto another small saucer. Dip the rims of the glasses into the maple syrup, then dip into the cinnamon and sugar mix, pressing to coat evenly. Flip over and fill glasses with the hot cocktail. Serve.

6 cups fresh apple cider
2 tablespoons packed dark-brown sugar
2 whole nutmeg seeds
1 vanilla bean (split and scraped)
6 ounces (3/4 cup) bourbon, if desired
Whipped cream
Honeyed Walnuts

Steps:

  • Combine apple cider, dark-brown sugar, nutmeg seeds, and vanilla bean in a medium saucepan. Gently simmer over medium-low heat for 15 minutes. Remove from heat, and add bourbon if desired. Remove and discard solids. Divide among 6 mugs or heatproof glasses, and top each with a dollop of whipped cream and a few honeyed walnuts.

8 clementines
2 cups calvados
8 cups apple juice
½ cup dark brown sugar
1 tablespoon whole cardamom pods
8 cinnamon sticks
8 whole star anises
1 teaspoon whole clove

Steps:

  • Using a vegetable peeler, peel the skins from the clementines, making sure not to include any of the white pith. Set the peels aside. Cut each clementine in half crosswise and juice.
  • In a medium pot over medium-low heat, combine the clementine peels and juice, calvados, apple juice, brown sugar, cardamom pods, cinnamon sticks, star anise pods, and cloves. Simmer for 20-25 minutes, without letting the mixture come to a boil. Remove the pot from the heat.
  • Ladle the cocktail into mugs and serve warm.
