SPINACH SALAD WITH CHORIZO AND APPLES

Spinach Salad With Chorizo and Apples image

Make and share this Spinach Salad With Chorizo and Apples recipe from Food.com.

Provided by Boomette

Categories     < 30 Mins

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1/4 lb chorizo sausage, finely sliced
2 cortland apples, peeled, cut in thick slices
1/4 cup olive oil
1/2 cup cider vinegar
2 teaspoons Dijon mustard
1 tablespoon honey
6 cups Baby Spinach
1/4 cup grilled pecans, crushed
salt and pepper

Steps:

  • In a large skillet, brown the chorizo and apples in half the oil.
  • Deglaze with vinegar and add remaining oil, mustard and honey. Let reduce 1 minute. Add salt and pepper.
  • Serve warm or lukewarm on the spinach and garnish with pecans.

Tips:

1. Prep and Mise en Place: Wash and trim the spinach and chorizo beforehand. Slice the chorizo into thin rounds for even cooking and optimal flavor distribution. 2. Choose Fresh Ingredients: Use fresh baby spinach for the best texture and flavor. Opt for high-quality chorizo with a smoky and spicy flavor. 3. Don't Overcook the Chorizo: Cook the chorizo over medium heat until it's slightly crispy but not dry. Overcooked chorizo will become tough and chewy. 4. Season Generously: Don't be shy with the seasonings. Garlic, smoked paprika, and cumin add depth of flavor to the dish. Adjust the amount of salt and pepper to your taste. 5. Add a Touch of Acid: A squeeze of lemon juice or balsamic vinegar brightens up the salad and balances the flavors. It also helps to wilt the spinach slightly. 6. Serve Immediately: Warm spinach and chorizo salad is best served immediately after cooking. The spinach will wilt and lose its vibrant color if it sits for too long.

Conclusion:

This warm spinach and chorizo salad is a quick and easy dish that's perfect for a light lunch or dinner. It's packed with flavor and nutrition, thanks to the combination of fresh spinach, smoky chorizo, and tangy vinaigrette. With its vibrant colors and delightful flavors, this salad is sure to impress your taste buds. So next time you're looking for a healthy and flavorful meal, give this warm spinach and chorizo salad a try. You won't be disappointed!
