Watergate dessert is a refreshing and light dessert that is perfect for any occasion. It is made with simple ingredients that you probably already have in your kitchen, and it can be prepared in just a few minutes. The original Watergate salad recipe was developed in the early 1970s by Phyllis Shafer, a wife of a church pastor, in response to a request from her church's deacons' wives for a salad to serve at a fundraising luncheon, so she experimented with a pistachio pudding mix, whipped topping, and pineapple, inspired by a pineapple upside-down cake. The dessert became popular at church potlucks and later spread to the national stage. Although its name is associated with the Watergate scandal of the same era, there is no evidence linking the two.

Tips for Making Watergate Dessert:

  • Use a standard-sized 9x13 inch baking dish to ensure the correct proportions of the layers.
  • Make sure the cream cheese is softened to room temperature before mixing to avoid lumps.
  • To easily chop the walnuts, place them in a plastic bag and crush them with a rolling pin.
  • If you don't have instant pistachio pudding mix, you can use regular pistachio pudding mix and simply whisk in 1/4 cup of milk powder.
  • Chill the dessert for at least 4 hours, or overnight, to allow the flavors to meld and the layers to set.
