I know its hard to work, take care of a family & somedays still make dinner. Trust me I know how you all feel. After working a full 8 hrs aday then coming home to take care of my Uncle & the house. Making dinner can just be sometimes over willing. But one trick I have come up with is making meals a head of timeor using what ever leftovers I have handy. This is one of many leftover meals. My Uncle loves them... :)

4 - flour tortillas (8 inch)
1 pound(s) ground beef
1 package(s) taco seasoning mix
4 cup(s) shredded lettuce
1 cup(s) kraft mex style shredded four cheese
1 large tomato, chopped
1/4 cup(s) ranch dressing

Steps:

  • heat the oven to 425F. Crumple 4 large sheets of foil to make 4 (3 inch) balls. Spray with cooking spray. Drape tortillas over them. Bake 6 to 8 minsor until tortillas are golden brown.
  • Re-warm up any already cooked ground beef with taco seasoning mix as firected on the package.
  • Fill each shell with lettuce,meat mixture, cheese & tomatoes just before serving. Drizzle with dressing.
  • Note: I make this about the same week I make meatloaf for dinner. Always leftover meatloaf. Here is my second meal out of 1 meal.

I needed to make a quick dinner & had leftover taco meat. I love salad meals, so this is what I came up with. The strawberry vinaigrette that I used was a wonderful sweet and tangy complement to the spiciness of the taco meat.

2 ounces taco flavored cooked ground beef, flavored with
taco seasoning
1 tablespoon sour cream
1 cup corn, canned (I used half a can delmonte)
3 cups mixed salad greens (I used dole iceberg mix)
1 tablespoon vinaigrette (I used strawberry vinaigrette)

Steps:

  • Saute taco meat and corn in small fry pan for approximately 5 minutes.
  • While that's cooking, put 3 cups salad mix in large bowl & mix with vinaigrette.
  • Pour meat & corn over salad.
  • Top with a dollop of sour cream.

1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1 large tomato, chopped
1/4 cup KRAFT Classic Ranch Dressing

  • Heat oven to 425°F.

1 (16 ounce) can refried beans
2 cups Mexican cheese
3 greens onions, chopped and green and white parts separated

  • Preheat your oven to 350 degrees.
  • Cook lasagna noodles according to package. Drain and set to the side.
  • Take out a 9x13 pan and spread a thin layer of salsa on the bottom, then 3 lasagna noodles covering it. Continue to layer the lasagna as follows: salsa, refried beans, taco meat, sour cream, Mexican cheese, lasagna noodles. Repeat until all lasagna noodles are used up.
