4 bone-in pork loin chops (8 ounces each)
1 tablespoon canola oil
1/4 cup seedless strawberry jam
2 tablespoons cider vinegar
1 tablespoon prepared mustard

Steps:

  • In a large skillet, brown pork chops in oil over medium-high heat for 2-3 minutes on each side. Reduce heat; cook, uncovered, for 10-15 minutes or until a thermometer reads 160°. , In a small microwave-safe bowl, combine the jam, vinegar and mustard. Cover and microwave on high for 20-25 seconds or until heated through. Serve over pork chops.

6 center-cut pork chops
1 large onion, peeled and sliced
3 apples, cored, peeled and sliced
2 tablespoons butter
1/4 cup brown sugar
1 (6 ounce) packet prepared stuffing
1/4 teaspoon pepper

Steps:

  • Cook the stuffing according to the box directions, put to one side.
  • Melt the butter in a large skillet, and saute the onion and apple slices for 10 mins, until onion is soft.Remove from skillet and place in the bottom of a casserole dish.
  • Sprinkle the brown sugar over the top of the onion apple mixture.
  • Add the pork chops to the skillet and lightly brown on both sides ( about 5 mins ).
  • Place the pork chops on top of the apples and onions, and sprinkle with the pepper.
  • Lastly cover the chops with the ready made stuffing.
  • Cover with foil and bake in a 350 degree oven for 1 hour.

I get home fairly late in the evening and get up very early, so I need recipes that cook fast, enjoyable, and healthy. This was one of those rather happy experiments. It's written for one (as I cook for one), but can certainly be expanded for a family.

1 boneless pork chop
1/2 cup apple juice
1 teaspoon instant minced garlic
1 teaspoon dried onion flakes
1 tablespoon apple butter

Steps:

  • Mix apple juice, onion, and garlic in a shallow pan and heat on medium (do not boil).
  • Add pork chop and cover loosly (folded foil works well).
  • Cook thoroughly, turning occasionally (there should be no pink inside the thickest part; cut to be sure).
  • Place pork on plate and top with apple butter. Serve with a side of salad, cooked vegetables, or rice.
