1 medium head cabbage, shredded
1 medium red onion, thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

3 cups uncooked yolk-free whole wheat noodles
1 pound lean ground beef (90% lean)
1 medium green pepper, finely chopped
1 can (15 ounces) tomato sauce
1 tablespoon Worcestershire sauce
1-1/2 teaspoons Italian seasoning
1 teaspoon sugar, optional
1 package (16 ounces) frozen mixed vegetables, thawed and drained
1/4 cup minced fresh parsley

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a large nonstick skillet, cook beef and pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. , Add tomato sauce, Worcestershire sauce, Italian seasoning and, if desired, sugar to beef mixture; bring to a boil. ½ head white cabbage, shredded
