4 avocados - peeled, pitted and diced
1 red onion, thinly sliced

  • In a large serving bowl, toss together the tomatoes, avocados and red onion. Dust lightly with black pepper, and pour salad dressing over. Cover and chill for at least one hour before serving to blend flavors.

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • In a large bowl mix together shell, bacon, tomatoes, and lettuce.
  • In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
  • Pour over shell mixture, stir and chill.

I love the flavour of guacamole so I came up with this simple, quick recipe for a pasta salad incorporating the same flavours. You can add a variety of other ingredients, cooked chicken would work particularly well. Serves 2 as a main dish or 4 as a side dish.

1 cup dry penne pasta
4 tablespoons lowest fat mayonnaise
1 1/2 teaspoons fresh lime juice (or lemon juice)
1 1/2 cups baby plum tomatoes
1 ripe avocado
1/4 red onion
1 cooked chicken breast, chopped (optional)
1 handful fresh coriander
1 pinch salt (optional)

Steps:

  • First, cook the pasta.
  • Meanwhile, put the mayonnaise and lime juice in a large bowl and stir.
  • Chop the baby plum tomatoes and avocado and add to the bowl. Finely dice and add the red onion. You may also like to add some cooked chicken.
  • When the pasta is cooked, drain it, then pour cold water over it for a few minutes to cool it quickly. Drain it again and add it to the bowl.
  • Finely chop as much fresh coriander as you like and sprinkle it over the top.
  • Season with salt if desired and stir the pasta salad thoroughly to mix all the ingredients together. If you are using properly ripe avocadoes, stirring the mixture should blend some of the avocado flesh into the dressing to develop the flavour.
  • Serve and enjoy!
